My Favorite Chicken Tortilla Soup

It’s the perfect time of year for soup making so I’m thrilled to share my favorite Chicken Tortilla Soup recipe. This recipe is so easy! For preparation, all you need to do is chop the onion, a rotisserie chicken, a tomato, cilantro and an adobo pepper. Then, mix, stir and serve. I love serving this soup with fresh avocado, tortilla chips and a squeeze of fresh lime juice. I often also dollop each bowl with a tablespoon of light sour cream or nonfat plain Greek yogurt. Serve with a salad for a healthy, light, gluten-free and low-calorie dinner!

Tips:

•If you have not purchased chipotle in adobo sauce before, you can find the cans in the international foods section where Mexican foods are. Chipotles are very spicy so start with just one chopped and add as needed for taste.

•If you have leftover grilled, roasted or baked chicken, feel free to use this instead of a rotisserie chicken.

•Double the recipe so you’ll have leftovers.

•Prepare the soup ahead of time leaving out the cilantro and lime juice. When reheating, add these ingredients right before heating and serving.

My sister, Julie, makes the best tortilla soup I have ever tried. I finally asked her for the recipe which actually came from The Food Network Kitchens. I adapted their recipe to create this Healthy Tortilla Soup. This recipe is so easy and only takes 10 minutes of preparation time. I used a rotisserie chicken for the chicken in this recipe which made this soup even simpler. Feel free to use fresh tomatoes and fresh corn if you’re making this in the summertime, but canned tomatoes and frozen corn are won’t compromise the flavor. My 3 kids loved this recipe, and it’s going on our Super Bowl recipe menu for sure! Enjoy this 30 minute recipe all winter and year round.

 

Tortilla Soup with Leftover Thanksgiving Turkey

If you have any leftover turkey from Thanksgiving, I have a great recipe idea. This Tortilla Soup recipe is my newest favorite, and it’s a perfect way to use up your turkey leftovers. I served it tonight, and I couldn’t stop eating it. If you don’t have any turkey leftovers, feel free to use cooked chicken (or a rotisserie chicken is perfect if you’re in a hurry). You can also make this a vegetarian recipe by substituting vegetable broth for chicken broth, omitting the turkey and using an entire can of black beans. My 3 kids loved this soup, and they told me it is the best tortilla soup they have ever tried. I took this as a sincere compliment and good endorsement! I hope you had a great Thanksgiving holiday!
