Blueberry Peach Cobbler Bars

Nothing says summer more than fresh blueberries and peaches. Yesterday, my daughter, Leigh and I made these Blueberry Peach Cobbler Bars. We ate these warm with a glass of milk, and honestly, we couldn’t stop eating them! Now that peaches and blueberries are at their peak, this is a perfect recipe to make these. These are on my menu list for Father’s Day, July 4th and for anytime this summer when I want to make something sweet and fresh.  Also, these bars will feed a crowd so share with some of your neighbors and friends.

This week’s Summerfest from the Food Network features one of my favorite stone fruits: plum recipes. My recipe for Pork, Plum and Rosemary Kabobs is a main dish favorite at our house during the summertime. The sweet and herb flavors blend wonderfully with the pork and plums. When I grill these, the kids are so excited. I love to cut additional plums for grilling because usually the kids are arguing about who took more. Taste of Summer: Savory Tomato-Basil Pie

When I worked at Southern Living Magazine, we tested a lot of Tomato Pie recipes. I have been searching for one without mayonnaise that was lighter, healthier and still tasted great. My assistant, Alatia, told me about one that she made recently. This Tomato-Basil Pie is super easy, and it makes great use of summery fresh tomatoes and basil. My kids said it tasted similar to a pizza, and they loved it. This is a great recipe idea for a party appetizer, light main-dish dinner or lunch. Serve with a drizzle of balsamic if you like. It’s a true taste of summer.
