I have been working on a ton of recipe testing lately (all healthy) for a super exciting new project! My kids have said they have never seen so much great, healthy food from me. HAHA, I guess I’ll take that as a “new” compliment! The other day, I had so many overripe bananas, that I made their favorite healthy quick breads: No Mixer Banana Bread recipe. Yes, with nonfat plan Greek yogurt and this time with fanned sliced bananas over the top. I don’t think it even lasted a full day, but it was wonderful. My son said, “There really isn’t anything better but this banana bread and a glass of milk.” Enjoy this No Mixer Banana Bread anytime of the year for breakfast, a mid morning snack or as a dessert, of course. No mixer is needed so cleanup is a snap.
I know it’s Passover so forgive me if you’re celebrating. I made this Fresh Strawberry Bread last week, and I could not wait to share the recipe. All you need is one big bowl–no mixer is needed. Combine all of the ingredients, except for the sliced strawberries in one bowl; mix and then fold the strawberries in gently. Even though this quick bread has bananas, it does not taste like banana bread when it’s done. The combination of the mashed bananas and nonfat plain Greek yogurt create an amazing moist texture and fantastic flavor.
Strawberries are now at their peak, and you can find them on sale at many groceries. One cup of strawberries has 50 calories, and they are packed with health benefits such as boosting your immune system, promoting eye and heart health, helping fight cancer, wrinkles, high cholesterol and so much more. Enjoy this recipe this spring and summer for breakfast, a snack or even dessert. My kids and husband went wild for us, so next time I will be making two!
My daughter, Leigh, saw a recipe for Skinny Banana Chocolate Chip Muffins by Ambitious Kitchen on Pinterest and asked me to make them. I made them today, and I made a few minor changes. They turned out great! I love that they use liquid coconut oil and nonfat Greek yogurt and her idea to put the bananas and liquid ingredients in the blender. This recipe is super quick and easy. They make a great morning or afternoon snack or easy breakfast on-the-go. Thanks to Leigh for finding this one and to the wonderful recipes from Ambitious Kitchen!
My sister, Julie, called me this morning and raved about a granola bar recipe she tried from Giada’s cookbook, Giada’s Feel Good Food. I had all of the ingredients on hand so I tweaked the recipe slightly and made these Super Easy Healthy Granola Bars, which came out awesome! I used liquid coconut oil instead of the safflower oil, added additional oats and vanilla, used golden raisins and added a combination pecans and walnuts instead of just walnuts. These are a fabulous gluten free healthy breakfast or mid or afternoon snack recipe. Since my daughter does not get a lunch break at school, this is the ideal blend of protein, fiber, carbohydrates to help her energized though her day. These also make a great travel snack, so try them now and thank me later!
If you read my blog on a regular basis, you can tell that we have been into making muffins lately at my house. Over the weekend my daughter, Leigh and I made these Healthy Banana Nut Muffins for the week for breakfast, lunches and afternoon snacks. We made regular size and mini muffins so the directions for the different baking times are below. These are really light and filled with flavor, and you won’t even believe they are whole wheat. No mixer is needed, so these are so easy and fun to make with the kids. If you make mini muffins, each muffin has 140 calories, 2.2 grams of fat, 26 grams of carbohydrates and 3.7 grams of protein per serving, so enjoy!

Perfect for a breakfast at home or on the go, this Memorial Day Smoothie in on our family weekend list! I think this recipe will be a wonderful, fun way to kick off summer with the kids This smoothie bowl recipe is made with dairy products which adds calcium important for bone strength. Strawberries are also the star of this recipe which are filled with antioxidants and said to rival spinach in their health benefits helping protect the heart, aiding in reducing cholesterol, boosting the immune system and reducing risks of cancer, arthritis and even gout. Free free to add some of your favorite toppings, granola, hemp seeds, unsweetened coconut, you name it. The sky is the limit this Memorial Day so be healthy and safe!
Are you burned out on your everyday breakfast routine? I am. I have been trying to change up my morning routine such as drinking warm lemon water before my cup of coffee, drinking more water and eating a healthier breakfast other than a nutritional bar. This Berry Yogurt Bowl starts with nonfat Greek yogurt (plain, vanilla or you favorite flavor), fruit of your choice and your favorite seeds and nuts. This can also be made as a smoothie bowl recipe using my recipe for 3 Ingredient Banana Smoothie or Berry Peach Smoothie as the base and then top with the remaining ingredients. This recipe is fabulous for breakfast or even afternoon snack.
I admit it. I have been MIA! Life got a little crazy buying and moving into a new house, but I am back! We are iced in today, so my kids and I made this Spiced Chocolate Covered Fruit recipe. It’s so easy and only 3 ingredients! Dark chocolate is rich in flavonoids, which have heart-protecting properties and are rich in antioxidants. The protective factors are only seen in dark chocolate that contained at least 60 percent (preferably 70 percent or more) cocoa. There’s nothing better than a healthy snack with only 3 ingredients!
Are you looking for something new for an afternoon snack mix? Or how about a healthy snack your kids can take to school? This Apple Snack Mix recipe has all of my favorite ingredients, and it’s made with freshly homemade dried apples. This snack recipe has been my go-to back to school snack for the kids. This would also make a great holiday gift idea, holiday open house snack. or fun idea for holiday school parties. For the apples, you can use almost any type such as Honeycrisp, pink lady or Braeburn or Granny Smith.
