I love super easy recipes that have only a few ingredients but still taste like a million bucks. This 3 ingredient recipe for Apple Tart is as easy as can be. I used Puff Pastry, fresh apples, granulated sugar, and that was it. It’s so easy to prepare, and it’s perfect for dessert, brunch or even an afternoon snack (my kids devoured this after school).
Okay, so this post is attributed to my daughter, Leigh, and her friend, Ellen. She spent the night with Ellen a few weeks ago and made these awesome Rice Krispy Easter Eggs. They were googling a fun Easter project, and they found this great idea from Family Fun magazine. She called me and said, “Mom, you must come take a picture of this to post on your blog.” At first, I was like, “Huh?” When I arrived at Ellen’s house, I realized how right Leigh was. These are adorable, fun and a great Easter treat idea for kids. As you notice from my picture, Ellen didn’t have any Easter colored M & M’s, but any colors will do. Happy Easter!
Since I have been working with so many brownie recipe variations for one of my food clients, I realized I needed to create the Best Passover Brownie. This ingredient combination worked like a charm. When I took them out of the oven, I took a picture and put them on Facebook (I was so excited how they turned out). I had a lot of people wanting the recipe ASAP so here it is. It is so easy and fabulous. My friend said, “These are the best Passover Brownies I have ever tasted.” I hope that you like them too, and that they sweeten up your holiday.
My sister, Julie, and her friend, Toby, bake great Passover desserts every year. This year, they tried a new recipe for Strawberry Bars which I just love. These awesome Passover bars remind me of a breakfast bar, but they are wonderful for dessert or an afternoon snack. You could also use apricot preserves as a variation if you like. This recipe for Mini Banana Bread Loaf has to be one of my all time favorites for so many reasons. First, it’s an awesome recipe and makes moist flavorful bread perfect for breakfast or a snack. It is also so healthy because it is made with nonfat Greek yogurt and ground flaxseed. I am a huge fan of using nonfat Greek yogurt because it has no fat, very few carbohydrates and is high in protein. Flaxseed is often called the “most powerful” plant food there is. It’s linked to so many benefits including reducing cholesterol, menopausal symptoms, constipation and arthritis. It also aids in protection against cancer, diabetes and heart disease. Lastly, you don’t even need a mixer so cleanup is a snap. When I taught the Kid’s Cooking Class a week ago in Park City, this recipe was a huge hit!
Saint Patrick’s Day is celebrated on March 17th, and I am so excited that I will be spending my Saint Patrick’s Day teaching a Kid’s Cooking Class at the Park City Mountain Resort in Park City, Utah. One of the recipes I’ll be making in the class is this healthy, easy and very simple Saint Patrick’s Day Fresh Herb Dip. It’s a great way to get the kids to try fresh herbs such as basil and dill and to eat fresh vegetables. I like to use reduced-fat Greek yogurt in this recipe because it has so may health benefits and is filled with protein which is perfect after a long day of skiing. Friends have been asking me what they can make for dinner since they often get in a rut and need new ideas. I know they want recipes that are simple, light and tasty. I love using thinly sliced pork loin chops often because they cook so quickly and are so versatile. This simple version of Chipotle-Spiced Pork has only 5 ingredients, and they are super flavorful (and pretty too)! If you’re making some for the kids, omit the chipotle, and add additional lemon pepper and a squeeze of lemon juice (unless they like spicy foods). In honor of the “Oscars” tonight, here’s a simple and quick appetizer recipe that is sure to please. With only 5 ingredients, This Fig and Walnut Chutney is awesome served with sliced apples, grapes, crackers and Gorgonzola cheese. In under 20 minutes, you will have a superstar appetizer that your guests (and/or family) will love. This recipe also works well with goat or feta cheese so feel free to substitute your favorite. Not only is this appetizer healthy, but it’s low in fat. It’s a great, quick appetizer recipe to serve for any holiday or entertaining occasion. It has been so cold in Alabama the past 2 months, so my family has been living on soup galore. It has finally warmed up thank goodness, but this Southwestern Soup is one of my kid’s favorites. My friend, Nancy, worked hard helping me to perfect the recipe. Many thanks to a wonderful friend. I used rotisserie chicken which saves a lot of time and effort. I love the touch of the homemade tortilla strips. I make this soup even in the summertime, but it’s always fabulous to serve this time of year.
Okay, so Valentine’s Day is over, and I had a lot of fun featuring some great desserts. Now, it’s back to reality. I have had many requests lately for a wonderful, healthy salad recipe. I love this particular creation of Tabouli and Mixed Greens Salad. Feel free to add cooked or grilled chicken or shrimp to this dish if you wish. I love it “as is” for a hearty lunch salad or dinner salad – perfect served with a comforting soup. It’s so fresh and flavorful, and bulgur is so good for you. Bulgur is high in fiber, low in fat, and rich in B vitamins and iron. It can be boiled or soaked like in my recipe below. This salad is so tasty and pretty, and it will also give you a lot of energy. Just try it and see.
