When I was in Park City last month, I was lucky enough to stay with my first blogging friend, Kelly, from Mountain Mama Cooks. Not only is Kelley a blogger, but she has had her own private chef business in Park City for many years. The first day I was there, we went to work out. Afterwards, she made the best Mixed Berry and Orange Smoothie, which I tried to recreate when I got home. She used almond milk instead of juice in hers, and it was fabulous. I didn’t have any on hand, so I used pomegranate juice. This smoothie recipe is so refreshing after a workout or makes a great breakfast if you add Greek yogurt or protein powder.
This weekend, I am so excited to be speaking at Food Blog South, a conference and workshop in Birmingham, Alabama on Recipe Development along with the talented Virginia Willis. It’s going to be wonderful weekend filled with bloggers, writers, photographers and so many others from around the country. Proceeds from the conference go to support a charity to restore the Gulf, and also support The Desert Island Supply Company, a Woodlawn-based writing center for kids. Recently, I was working on a recipe development project for a client creating recipes made with citrus fruits. I loved how these Orange Ricotta Pancakes turned out: so light and fluffy with the perfect hint of orange flavor. This makes a great breakfast idea for this weekend since oranges are at their peak. I have to credit this beverage to Kay, who makes the best cocktails. We love going swimming at her fabulous pool, and she even makes non-alcocholic versions for the kids. This is a great summertime drink that’s perfect when you want something really easy but special and delicious.
