Frozen Pomegranate Margarita

We are huge fans of pomegranate juice at my house. I like to put a splash in my water bottles, but the kids will drink it by itself. I twisted up the classic margarita cocktail to create this Frozen Pomagranate Margarita recipe. It is perfect for anytime this summer, when you want a cool, frozen cocktail beverage.

Okay, so occasionally I splurge and post a recipe that’s not the healthiest, but it’s the weekend, right? Here is a recipe for Orange Margaritas that’s great. I have to credit this beverage to Kay, who makes the best cocktails. We love going swimming at her fabulous pool, and she even makes non-alcocholic versions for the kids. This is a great summertime drink that’s perfect when you want something really easy but special and delicious.

Great Anytime Appetizer that is Low-Fat: Oh So Easy Empanadas

Sorry I have been so out of touch. I have been preparing for the “Kids Healthy Baking” Cooking class at Studio B in Alys Beach, Florida all last week. The class was yesterday, and we had 24 kids-huge success! Back to the grind now, but not yet. Since I had the best margarita ever today with wonderful company at Caliza Pool in Alys Beach, I thought I would share a recipe for easy Empanadas that are low-fat (85 calories and 1.5 grams of fat per serving), easy and delicious! Here’s to incredible surroundings!

This recipe is my son, Alec’s favorite. It will be featured on NBC 13 Daytime Alabama next month, but I thought I would share the recipe with you now. It’s really simple and tastes fabulous with or without tequila. I am in the process of making some new adjustments to my site so my posts might be few and far between for the next few weeks. Celebrate Cinco De Mayo with Pomegranate Margaritas

I featured this awesome Pomegranate Recipe when my blog was brand new back in November right before Thanksgiving. Since Cinco De Mayo is around the corner, I thought I would share it one more time. Adding pomegranate juice adds great depth of flavor to this simple beverage. It is perfect to serve this time of year as the weather has warmed up here in the south, and spring is upon us.
