I can’t believe this weekend is Labor Day! My 3 kids are in full swing with school already, and football season is starts this weekend. In Alabama, people are traveling to either Dallas or Atlanta this weekend to watch Alabama and Auburn football. In our state, football is a religion, and saturdays are truly about football, food and fun. Lightened-Up Pimiento Cheese Recipe

Since it’s Labor Day weekend (and the start of college football), I thought I would share a lightened-up version of pimiento cheese perfect for a game day appetizer, Labor Day picnic, or weekend snack with crackers. Most of our friends will be at the Alabama game, Auburn game, the lake or the beach (that is how it goes around here in the south). I will be at the Auburn game because my daughter’s cheerleading team gets to cheer during the Auburn halftime show. How cool is that? Anyway, this Lightened-Up Pimiento Cheese uses Greek yogurt and mayonnaise. It tastes great, and no one will know the difference. I also like to add smoked paprika or chipotle seasoning for an added kick. Have a great, safe weekend!

Lightened-Up Southern Potato Salad Recipe

My three kids loved potato salad, and their great grandmother, Dee Dee, used to make the best any of us has ever had. I didn’t have her recipe before she passed, but I know this recipe for Lightened-Up Potato Salad is pretty close. We used to dine with her often on Sundays, and she was such a wonderful cook and baker. I think she would approve this recipe, but she might not be 100% thrilled I lightened it up – she loved the “Real Thing”. This recipe is great for sunday lunches, showers, tailgating and fall parties so I thought today was a great time to share it with you.

Labor Day Recipe: Easy Beef-Vegetable Kabobs

Celebrate Labor Day with these Easy Beef-Vegetable Kabobs. We make kabobs almost every week. My kids absolutely love them, and so do I. They are so simple to prepare and basically a complete meal. I serve them with rice and/or a salad, and dinner is on the table. I developed this recipe for US Wellness Meats. The quality of their beef is fabulous, and I love that they have kabob meat so there’s no slicing involved. This is what I will be serving on Labor Day, and I hope you have a great holiday!

Super Foods Salad: Watermelon and Goat Cheese Arugula Salad

I wanted to make a great Labor Day salad, but wanted to include my favorite “super foods”. I tossed some fresh arugula with watermelon, blueberries, walnuts and goat cheese (I love Belle Chevre) and drizzled it with a little olive oil and balsamic vinegar. There you have it. Not only is this so beautiful to serve, but so healthy and incredibly delicious.  Great for Labor Day or any day!

Game Day and Labor Day Appetizer: Grilled Blue Corn Nachos

Since we are headed into Labor Day weekend and the start of college football season, I thought I would share one of my all time top requested recipes. College football here in Alabama is huge.  As you may know, Auburn also won the National Championship last year. Alabama people are passionate about football, whether it’s Alabama, Auburn, or UAB, so parties, tailgating and food are super important. This recipe for Grilled Blue Corn Nachos is always a hit with friends during football season. I like to make these on the grill for that extra hint of grilled flavor. Feel free to bake them in the oven, and they still taste great!

Who isn’t looking for an awesome cookie recipe? The only problem I had with these was trying to give them a name. They are filled with my favorites: peanut butter, chocolate chips, crispy rice cereal (Rice Krispies), and they are fabulous. We were loving them when they came out of the oven, and my daughter took some to school, and she said kids were almost fighting over them. Try them, and you will see exactly what I mean.

Summer Fest Easy Appetizer or Salad: Tomatoes with Basil Drizzle

I love serving fresh tomatoes this time of year instead of a salad. Since Summer Fest 2010 features tomatoes for its last week, I thought this was a perfect healthy and easy side dish or salad while tomatoes are at their peak. Add some thinly sliced mozzarella if you wish, or leave as is. This basil drizzle is also wonderful served over grilled chicken, steak, shrimp or pork.
