Easy Strawberry Cobbler

I began planning a Memorial Day weekend menu today, and this recipe for Easy Strawberry Cobbler is on my list. Now that strawberries are in season, it is the ideal time to prepare this warm, succulent cobbler. This recipe is extremely simple, with only fifteen minutes of preparation time. The most time-consuming part is slicing the strawberries.

A Southern dessert, a cobbler is usually prepared with a biscuit topping. For my recipe, I added oats to my topping mixture, which creates a slight crunch and nice texture. When my three kids tried this recipe they said, “Mom, this is the best thing you have ever made.”

Enjoy this for a fresh and fabulous Memorial Day dessert or any time while strawberries are at their peak. Have a fabulous holiday weekend and stay well!

Banana Dark Chocolate Chip Muffins

I am excited to share this recipe for Banana Dark Chocolate Muffins. This recipe is a twist of my very popular banana bread recipe from 10 years ago, which is one of my top posts ever.  What’s great about this recipe (besides the taste) is that all of the ingredients can be combined in one bowl, and no mixer is needed. I add nonfat Greek yogurt which adds moisture and increases the protein in the recipe.

These muffins are amazing, and my kids went wild over them. I almost wasn’t able to take a picture of them before they ate them all. Substitute semisweet or milk chocolate chips for the dark chocolate chips if you like (I personally like dark chocolate) Enjoy these muffins for a wonderful breakfast treat, afternoon snack, lunch, or dinnertime dessert during quarantine or any time.

Best Christmas Cookies Ever

Best Christmas Cookies Ever

My daughter, Leigh, made this cookie recipe from Allrecipes for all of her friends for holiday presents. They came out so good that we had to make them again for Christmas this week. This recipe is foolproof and easy. I love the icing with a touch of almond extract if you like a light almond flavor. Make sure you have your cookie cutters on hand and plenty of flour on your counter for rolling the dough. Feel free to half the recipe if you want to make a smaller batch, but we warn you. Your family and friends won’t be able to stopping eating these! Thank you Leigh for all of your help!

If you’re overwhelmed with the holidays, take a deep breath and read on. These Eggnog Milkshakes take only 5 minutes to prepare and you really only need 2 ingredients. If you’re having a group of kids or adults over, or just want to make something sweet for your family, these are simple and delicious! For adults, if you want to add bourbon or rum for a nighttime dessert treat, go right ahead. This is my newest favorite Christmas milkshake although everyone still emails me for my recipe for Peppermint Milkshakes from 2008. Find the recipe here.

Holiday Breakfast Cake

Holiday Breakfast Cake

I am a huge coffee cake fan, so I decide to try this Holiday Breakfast Cake recipe for my husband and the kids. This is a great recipe for Christmas morning, holiday gift, a brunch, a shower, dessert, or even a special snack to last all weekend. For dessert, you may want to add a simple icing, but it’s wonderful without it too! Serve at room temperature or warm beforehand. My favorite way to enjoy it is with a cup of coffee or for an afternoon snack.

Healthy Banana Nut Muffins

If you read my blog on a regular basis, you can tell that we have been into making muffins lately at my house. Over the weekend my daughter, Leigh and I made these Healthy Banana Nut Muffins for the week for breakfast, lunches and afternoon snacks. We made regular size and mini muffins so the directions for the different baking times are below. These are really light and filled with flavor, and you won’t even believe they are whole wheat. No mixer is needed, so these are so easy and fun to make with the kids. If you make mini muffins, each muffin has 140 calories, 2.2 grams of fat, 26 grams of carbohydrates and 3.7 grams of protein per serving, so enjoy!

Fresh Cherry Cinnamon Rolls

Fresh Cherry Cinnamon Rolls

I had some leftover fresh Northwest Cherries and wanted to make something I don’t ordinarily make. I thought, cherry cinnamon rolls, let’s do it! I used frozen bread dough to simplify things, fresh cherries, and these came out incredible! My husband, who says he doesn’t like cherries (who doesn’t like cherries) loved these, and my kids said, “When are you making them again?” These Fresh Cherry Cinnamon Rolls are the perfect recipe for a summertime brunch or breakfast! My sister is making them for a wedding shower next week. Enjoy them while fresh cherries are at their peak!

Expresso Fudge

Espresso Fudge

I hope everyone had a fabulous Thanksgiving holiday! I did! I completed a huge amount of holiday shopping (I am so thrilled, and we had amazing family time!) Now it’s time to get back to the grind and think about work and kids (and more holiday organization). I made this recipe today for Expresso Fudge form the Cooking Channel Stars and mixology duo, Alie Ward & Georgia Hardstark. I will be making this homemade fudge recipe for teacher gifts and holiday get-togethers. This recipe is made with NESCAFÉ Dolce Gusto Espresso Intenso pods which adds to it’s great coffee flavor.

Citrus Apple Sparkler: Kid Friendly

With Thanksgiving coming up, I thought i would share a easy 2 ingredient festive recipe for the kids and adults. Enjoy this Citrus Apple Sparkler recipe made with my daughter’s favorite  Sparkling ICE, a zero-calorie, naturally flavored sparkling water. It’s so easy and so good! Pretty too!

Salmon Salad Crostini

Summer is in full swing, and so many friends go to the lake or beach for the weekends. Recently, I have had so many requests for summer appetizers. This Salmon Salad Crostini is one of my newest favorites. Salmon is so healthy for you, and I have been craving it a lot lately. This is a great way to use salmon in a different way or when you have salmon leftovers. This also makes a great shower appetizer or even a holiday appetizer this fall. In under 30 minutes, you’ll have this ready to serve.
