My sister, Natalie, asked me for some main-dish dinner ideas since her two daughters are now home from college for the summer. This recipe for Flank Steak with Tomatoes and Feta is perfect for weeknights and weekends, especially since it’s grilling season (and Memorial Day is coming up). It’s so simple to prepare using fresh basil, oregano, garlic, fresh lemon juice and red wine vinegar. And who says beef isn’t healthy? Flank Steak with Tomatoes and Feta only has 185 calories, 29 grams of protein and only 2 grams of fat and carbohydrates per serving.

Sorry I have been so out of touch. I have been preparing for the “Kids Healthy Baking” Cooking class at Studio B in Alys Beach, Florida all last week. The class was yesterday, and we had 24 kids-huge success! Back to the grind now, but not yet. Since I had the best margarita ever today with wonderful company at Caliza Pool in Alys Beach, I thought I would share a recipe for easy Empanadas that are low-fat (85 calories and 1.5 grams of fat per serving), easy and delicious! Here’s to incredible surroundings!

Awesome Low-Fat, Low-Calorie Tapas/Appetizer: Steak Tomato Crostini

I had a busy week with my friends from Laura’s Lean Beef in town on their media tour stop at Health, Cooking Light and Southern Living magazines. I treated some of the food editors to some appetizers featuring Laura’s Lean Beef, and this was one of my favorites. They are only 200 calories and 4 grams of fat per serving, and Steak Tomato Crostini are fabulous. Start by combining fresh rosemary, basil, sun-dried tomatoes in the food processor and then stir in fresh roma tomatoes. Then, top the French bread with the tomato mixture, steak and blue cheese. I developed this recipe a while back, but it is a wonderful classic, especially for steak lovers.

Appetizers for March Madness or Academy Awards Night: Low-Fat Beef Nachos

Appetizers are on the rise this month with ¬†basketball’s March Madness and the Academy Awards. If you’re looking to be “good” and not overdo it, this recipe is only 9 grams of fat per serving. Weeknight Favorite: Roasted Garlic Turkey-Basil Meatloaf

I love making Turkey Meatloaf this time of the year because everyone in the family loves it, and it’s such a cinch to prepare. This recipe has extra garlic flavor with fresh garlic and tomato sauce with roasted garlic. Chop some fresh basil and add panko breadcrumbs to make it even more special. Enjoy on a busy weeknight or sunday night supper.

Simple and Warm Comfort Food: Easy Pot Roast

Some of my friends were telling me that they were scared to make pot roast. I told them it’s really one of the easiest things to make and is such a crowd pleaser (not to mention the kitchen will smell divine). I love to make this recipe because it feeds a crowd if we have company, and if not, we have leftovers. There’s nothing greater and comforting when the weather is so cold.

So many people tell me that they’re intimidated to grill pork tenderloins. Don’t be. They¬†are really simple to do and come out tasting great, especailly this recipe for Pork Tenderloin with Pomegranate Salsa. I developed this recipe for POM Pomegranate juice and promotion of pomegranates, and it is really delcious and healthy. If you don’t eat pork, this salsa goes great with chicken or fish. This makes a great Sunday night or weeknight dinner. It’s so pretty and flavorful.

Low Calorie, Low-Fat: Quick and Easy Chipotle Chili

My boys love chili, and we make it often at my house, especially this time of year. With only 248 calories and 4.8 grams of fat, this chili is low in fat and calories. I developed this recipe for Laura’s Lean Beef, but the original recipe has black beans instead of kidney beans and no chipotle seasoning. Both versions are wonderful. If you are really short on time and only have about 10 minutes, I love the Publix seasoning packet. Just add beef, tomatoes and beans, and it comes out great.

Easy Weeknight Family Favorite: Baked Penne

My kids love pasta for dinner especially when it’s made with penne noodles. I thew this recipe together in no time, and they went crazy over it. It’s as simple and basic as can be, but it is a true family pleaser.

Beefy Hoppin John is perfect for New Year’s Day. I developed this recipe for Laura’s Lean Beef, and it’s only 318 calories per serving and 4 grams of fat per serving.
