Easy Grilling: Jamaican Spiced Flank Steak

I do a lot of grilling in the summer, but honestly, I am grilling year-round. Every year, I work on so many grilling recipe projects for food clients, magazines and cookbooks, and my kids love almost anything that is cooked on the grill. Flank steak is always on the top of my list, and I love this Jamaican Flank Steak recipe. The marinade is really fabulous, made with orange juice, lime juice, fresh ginger, brown sugar, pepper and cinnamon. One of my friends tried it, and she told me she only cooks flank steak this way now. Serve this with a tossed salad, fresh fruit or grilled asparagus, and dinner is fresh, healthy and simple.

Zucchini-Wrapped Scallops

I am having such a great summer so far. Lots of travel, work, fun and family time… and more to come. This gives me a huge smile. In celebration, I thought I would share this perfect recipe for summer. These Zucchini-Wrapped Scallops are a fun twist on a great appetizer or main dish. These are simple to prepare: under 30 minutes from start to finish. They are so light, healthy and fresh, so what more can I say? I made these recently for a party, and everyone went nuts. Labor Day Recipe: Easy Beef-Vegetable Kabobs

Celebrate Labor Day with these Easy Beef-Vegetable Kabobs. We make kabobs almost every week. My kids absolutely love them, and so do I. They are so simple to prepare and basically a complete meal. I serve them with rice and/or a salad, and dinner is on the table. I developed this recipe for US Wellness Meats. The quality of their beef is fabulous, and I love that they have kabob meat so there’s no slicing involved. This is what I will be serving on Labor Day, and I hope you have a great holiday!

Game Day and Labor Day Appetizer: Grilled Blue Corn Nachos

Since we are headed into Labor Day weekend and the start of college football season, I thought I would share one of my all time top requested recipes. College football here in Alabama is huge.  As you may know, Auburn also won the National Championship last year. Alabama people are passionate about football, whether it’s Alabama, Auburn, or UAB, so parties, tailgating and food are super important. This recipe for Grilled Blue Corn Nachos is always a hit with friends during football season. I like to make these on the grill for that extra hint of grilled flavor. Feel free to bake them in the oven, and they still taste great!

Easy Dinner Idea: Grilled Pizza with Basil, Mushrooms and Mini Pepperoni

I recently saw a pizza grill pan last week in the window at The Cook Store, a wonderful neighborhood cooking store where I live. I thought to myself, “I want that!”. I received one for a present shortly thereafter, and I was very excited (thanks @jon_lewistwitter handle). I used it the other night when I was in a pinch as I was testing recipes for my upcoming book (Chipotle Pork Wraps with Slaw).  My kids didn’t want that for dinner so I threw this Grilled Pizza with Basil, Mushrooms and Mini Turkey Pepperoni together for them. I ended up eating both (of course) because it turned out so great!

Summer Easy Dinner: Glazed Pork with Peach Salsa

Try Pork with Peach Salsa for a quick summer weeknight meal. This recipe is so easy using peach preserves and honey as a glaze over the pork. I use boneless pork loin chops because they cook so quickly, perfect for busy people. Feel free to grill the pork outdoors, inside in a grill pan or even nonstick skillet. This Peach Salsa is wonderful and filled with fresh peaches, cilantro, purple onion and lime juice. If you don’t eat pork, feel free to subsitute boneless chicken breasts, or I prefer chicken cutlets because they are thinner and cook even quicker.

Gluten-Free, Low Carb and Low Calorie: Flank Steak with Tomatoes and Feta

My sister, Natalie, asked me for some main-dish dinner ideas since her two daughters are now home from college for the summer. This recipe for Flank Steak with Tomatoes and Feta is perfect for weeknights and weekends, especially since it’s grilling season (and Memorial Day is coming up). It’s so simple to prepare using fresh basil, oregano, garlic, fresh lemon juice and red wine vinegar. And who says beef isn’t healthy? Flank Steak with Tomatoes and Feta only has 185 calories, 29 grams of protein and only 2 grams of fat and carbohydrates per serving.

Healthy and Light: Simple Pork Tenderloin with Pomegranate Salsa

So many people tell me that they’re intimidated to grill pork tenderloins. Don’t be. They are really simple to do and come out tasting great, especailly this recipe for Pork Tenderloin with Pomegranate Salsa. I developed this recipe for POM Pomegranate juice and promotion of pomegranates, and it is really delcious and healthy. If you don’t eat pork, this salsa goes great with chicken or fish. This makes a great Sunday night or weeknight dinner. It’s so pretty and flavorful.

Steak-Fresh Herb and Tomato Crostini Appetizer

Since summer is here, I like to cook appetizer recipes that are easy to prepare, delicious and perfect to serve while I’m grilling outside. This recipe works great using leftover steak, or if you want to serve a hearty appetizer, you can create this one on the grill while you are grilling the rest of your meal. I love the combination of sun-dried tomatoes and fresh plum tomatoes. If you don’t like blue cheese, use fresh Parmesan or feta cheese. I developed this recipe for Laura’s Lean Beef, and it would be perfect for the Fourth of July.

 

Father’s Day Favorite: Buffalo Hot Wings and Honey-Garlic Wings

Since men love buffalo wings and hot wings, I thought I would offer up a wing recipe for Father’s Day. The trick with these is preparing them on the grill. That will save you on calories and fat not deep frying them in hot oil over the stove. I love this recipe for Honey-Garlic Wings which I have adapted from Weber’s Way to Grill Cookbook. For the Buffalo Hot Wings, just combine 3/4 cup of hot sauce with 2 tablespoons lemon juice and 1 clove of minced garlic and marinate the wings in that  mixture and continue with the grilling instructions below. Or, I love Moore’s Hot Wing Sauce if you’re in a hurry. Enjoy these during summertime, Father’s Day or Fourth of July.
