It’s only 3 weeks until the Super Bowl, and I am already getting emails, direct Facebook, Twitter, Instagram messages and texts for recipe ideas. This Steak Nacho Recipe should be on your list for sure! I made this last week for my kids and husband, and they LOVED it! It’s really easy, fun to make and so flavorful. I will be making several versions of these nachos with ribeye steaks in one, grilled chicken in another, and a third with just black beans (for my vegetarian friends). Also, if you’re looking for a great grilled steak rub, try the spices listed above because the steaks by themselves are incredibly tasty too. Tuna Zucchini Kabobs
Zucchini recipes are so hot right now on the internet, so why not try something a little out of the box and combine them with fresh tuna, bell peppers and a citrus marinade such as in these Tuna Zucchini Kabobs. The Moroccan flavors of the marinade pair well with the grilled fish and vegetables. Easy to prepare and a party showstopper, these are low in calories, fat and carbohydrates. They are also a paleo-friendly and gluten free, so sit back, relax, and enjoy!
Grilled Salmon Burgers
For Father’s Day this year, I am thinking about making these Grilled Salmon Burgers which is my MOST favorite new burger recipe. They are amazing, healthy and so easy! The most difficult part is taking the salmon off the skin, but here is how:
Place the fillet, skin-side down, on a chopping board. Coat the tail end in salt to give you a good grip and stop it from slipping. Holding from the tail end firmly use a sharp knife to make a cut between the flesh and skin in the opposite direction from the tail end. Holding the end tightly, continue to cut along the length of the fillet, making sure not to cut through the skin; remove and discard the skin.
Once you have the skin off, place the salmon in a food processor and make into patties. Make sure you follow my directions and allow them to set in the refrigerator for at least 2 hours. They are taste terrific served with my wasabi mayonnaise mixture made with Greek yogurt, low-fat mayonnaise and low-sodium soy sauce, but you can also serve these with tartar sauce or cocktail sauce. These were also great made a day ahead and reheated so enjoy!
Grilled Ratatouille Salad
Ratatouille is a French side dish located with Mediterranean vegetables. I decided to turn this healthy side into a salad with grilled vegetables and quinoa with this Grilled Ratatouille Salad recipe. This gluten-free and vegan recipe is perfect for a weeknight summer dinner or weekend lunch. I am actually serving this alongside grilled steaks this Memorial Day weekend. It’s three of my favorite things: healthy, flavorful and beautiful!
Smokey Barbecue Hamburgers
With a house full of teens hamburgers on the grill are the ideal summer or anytime go-to dinner idea. They LOVE this recipe for Smokey Barbecue Hamburgers! To keep it a bit healthier, combine different kinds of ground meats and season them using this Smokey BBQ Ketchup to bridge the smokey flavors of barbecue with the classic ketchup texture and taste. Use a mixture of ground beef, turkey, lamb, chicken….any combination works and mix in a few tablespoons of the Smokey BBQ Ketchup to the meat as you form the patties.It’s SO easy and flavorful! I am loving this ketchup collection from Victoria Amory! Look for it in a store near you or order it on her website.

This week’s Summerfest from the Food Network features one of my favorite stone fruits: plum recipes. My recipe for Pork, Plum and Rosemary Kabobs is a main dish favorite at our house during the summertime. The sweet and herb flavors blend wonderfully with the pork and plums. When I grill these, the kids are so excited. I love to cut additional plums for grilling because usually the kids are arguing about who took more.
