Start your week off right with these 10 Minute Protein Pancakes. I love breakfast for dinner, and these provide you with plenty of great flavor and protein. They contain chia seeds – the highest known plant source of omega 3’s and omega 6’s. These are also said to help to energize and detox the body. 3 Ingredient Coffee Milkshake

We are HUGE fans of milkshakes at my house, and my kids are always concocting recipes and new variations. Since my youngest son, Zachary, loves coffee ice cream, he blended only 3 ingredients together to make this amazing 3 Ingredient Coffee Milkshake. It’s definitely as good as it looks. I think I have another future recipe developer on my hands :). And don’t forget: Milkshakes can be healthy! They contain milk which is high in protein and our bones need it so enjoy!

Grilled Salmon and Gruyere Grilled Cheese

Grilled Cheese has been called “America’s Comfort Food”, and it has been a huge food trend in 2012. This past year grilled cheese sandwiches have been featured on gourmet restaurant’s menus, and there has been a huge increase in grilled cheese food trucks across the U.S. This Brie and Raspberry Panini with Hazelnut Spread recipe is one of the 150 recipes in my latest cookbook release “150 Best Grilled Cheese Sandwiches”. High Antioxidant Superfoods Salad

Since I have been doing a lot of nutrition seminars and speaking engagements lately on superfoods and healthy eating habits, it has been so fun to experiment with various combinations of super healthy ingredients. Last week, I thew together this with this High Antioxidant Superfoods Salad. My newest favorite ingredient is broccoli sprouts, and my kids and I are infatuated with them. They are so healthy and are said to help prevent cancer, reduce inflammation and even help protect against ulcers. This salad is also filled with some of my other super food favorites including berries, pumpkin seeds and colorful greens. If you want a refresher on the health benefits of blackberries, read my post on “Top 10 Health Benefits of Blackberries.”  Feel free to add grilled chicken or shrimp along with your favorite salad dressing, or just simply use balsamic vinegar and oil.

This week’s Summerfest from the Food Network features one of my favorite stone fruits: plum recipes. My recipe for Pork, Plum and Rosemary Kabobs is a main dish favorite at our house during the summertime. The sweet and herb flavors blend wonderfully with the pork and plums. When I grill these, the kids are so excited. I love to cut additional plums for grilling because usually the kids are arguing about who took more. Cucumber and Tomatoes always go together naturally for me, as this was something I always ate growing up in Alabama. Beat the Heat with Healthy Sparkling Fruit Water

It’s been so hot here, and every day my kids and I are trying to come up with new ways to keep cool. I decided to freeze some pomegranate juice and blueberries and combine it in sparkling lime-flavored water to create this super refreshing and healthy Sparkling Fruit Water. It’s so easy!
