Three Ingredient Blueberry-Banana Ice

This Blueberry-Banana Ice is one of those recipes that is almost too basic (and good) to be true. Simple is sometimes better. Recipes with only three ingredients can be as fabulous and flavorful as if it had more. Who needs all of the fuss?

To prepare this recipe, purchase ripe bananas and in season blueberries and freeze them (I used zip-top plastic bags). Place these ingredients in the food processor or blender with a touch of honey. It’s that easy. Feel free to experiment with other berries if you wish. This is the perfect healthy dessert for summertime. It’s healthy, great for your immune system and all natural. It   truly hits the spot.

Healthy Pan Bagnat Grilled Cheese

Today’s recipe for Healthy Pan Bagnat Grilled Cheese is one of my absolute favorites. Have you ever tried a Pan Bagnat? The name for this sandwich (pronounced pɑ̃ baˈɲa) originates from Nice, France. It consists of ingredients in a Salade Niçoise, including canned tuna, olives, anchovies, tomatoes, onions and hard-boiled eggs. I tweaked my recipe to create a healthy grilled cheese, while still using most of the traditional ingredients.

This sandwich recipe is one of my favorites in the “light and healthy” chapter of my cookbook 150 Best Grilled Cheese Sandwiches.  Place your tuna in a mixing bowl and add fresh lemon juice, vinegar, olive oil and pepper. These ingredients give it a nice, light flavor. Top the bread with fresh tomatoes and spinach leaves and some freshly grated Parmesan. Then, place in a Panini grill or large skillet to get it a little warm and toasted, and it’s fantastic!

This is a recipe I developed for a recipe collection I worked on with Canolainfo.org. I like to grill extra chicken and use the leftovers to make this recipe. Serve it on a bed of mixed greens or as a light main course served with a nice glass of Pinot Grigio. It is a terrific recipe to take on a picnic or make at the lake or the beach. Tuna Checkerboard Sandwiches

With kids at home right now, I wanted to share a twist on the basic tuna sandwich. Make it fun by mixing and matching different types of bread to jazz up the kids’ sandwiches. These Tuna Checkerboard Sandwiches are my healthier version using fresh lemon juice and white wine vinegar instead of mayonnaise. I also add freshly chopped basil or dill to mine if you have that at home or in your garden. This recipe is light, flavorful and a great new way to get the kids to eat more tuna. It has been an amazing healthy summer, and I have some BIG news! I am working on my third internationally published cookbook! YAY!!! This book is a “Healthy Recipe” topic which is still hush hush for now. This Easy Homemade Muesli recipe might be in one of the chapters. It’s filled with oats, seeds and your favorite dried fruits. Happy May and Cinco De Mayo! I am finally back from Italy, and now is the time to spice it up for summer entertaining just in time for Mother’s Day, Memorial Day, graduation, lake and beach parties. I made this Taquito Layered Dip today when I was having some friends over, and I saved a ton of time by using Chicken Taquito’s by Jose Ole.
