I am so excited these Vanilla Chai Power Bars. I recently got my hands on a FABULOUS vegetarian cookbook: Vegan Everyday by Douglas McNish, a vegan executive chef who has a strong commitment to health and organics. Published by Robert Rose Books, this cookbook is filled with 500 recipes that are bold, innovative, fresh and wonderful for vegans and non-vegans. You’ll find recipes for every occasion and every meal of the day.

I love the Peach Cobbler, Mini Quinoa Croquettes, Singapore Summer Rolls, and these Vanilla Chai Power Bars. These energy bars are a great item to keep on hand for snacking on the go, or enjoy them as a quick breakfast with a cold glass of milk. Filled with millet, chia seeds and spices, these bars are too good!

My kids went wild over these, and they are awesome for travel too. If you’re looking for puffed quinoa and millet, you can find them in most well stocked supermarkets and natural food stores. Enjoy and be sure to check out this amazing cookbook.

Easy Gluten Free Granola

I have a granola obsession. I eat it about five times a week. No joking here. This Easy Gluten Free Granola recipe is my new go-to granola favorite. It starts with gluten free rolled oats (my favorite one is from Trader Joes). I add raw pecans, almonds, pumpkin seeds, flaxseeds and cinnamon for my base. My liquid mixture is comprised of a mixture of honey, maple syrup, coconut oil and vanilla. Bake it in the oven, and it is that simple.

I am so picky about granola. Honestly, I have tried every single granola brand out there. I cannot find one store brand that has wowed me over. When my daughter and I put this version together, I have been making it ever since.

How I use granola:

•Top off smoothie bowls or smoothies

•Add to Greek Yogurt with fresh fruit

•Eat as a grab-and-go snack.

•Add to warm oatmeal

•Serve with milk

•Give as a gift

If you want to add or subtract nuts to my recipe, go ahead. Also, if you want to add dried fruit to the mixture, add after baking.

If I do ever purchase granola, my favorite is the grainless granola is from Alabama Biscuit in Birmingham.

Easy Lemon Poppyseed Muffins

If you want a new breakfast or brunch baking recipe, try this recipe for Easy Lemon Poppyseed Muffins. These muffins make a scrumptious spring or summer breakfast, mid-morning or afternoon snack or dessert.

We love anything with fresh lemon, so these muffins always win rave reviews with my kids and husband. I lightened up this recipe by substituting nonfat plain Greek yogurt for some of the milk and sour cream.

If you’re stuck at home, these are simple to make. Hopefully, they can brighten your day.  If you’re headed out to the lake, beach or poolside, these Lemon Poppyseed Muffins are perfect for kids and family. Also, they are a great snack for long car rides. Store them at room temperature in an airtight container, and they should last up four to five days. Enjoy and have a great week!

Banana Dark Chocolate Chip Muffins

I am excited to share this recipe for Banana Dark Chocolate Muffins. This recipe is a twist of my very popular banana bread recipe from 10 years ago, which is one of my top posts ever.  What’s great about this recipe (besides the taste) is that all of the ingredients can be combined in one bowl, and no mixer is needed. I add nonfat Greek yogurt which adds moisture and increases the protein in the recipe.

These muffins are amazing, and my kids went wild over them. I almost wasn’t able to take a picture of them before they ate them all. Substitute semisweet or milk chocolate chips for the dark chocolate chips if you like (I personally like dark chocolate) Enjoy these muffins for a wonderful breakfast treat, afternoon snack, lunch, or dinnertime dessert during quarantine or any time.

Huevos Rancheros Wraps

Start your Cinco De Mayo off on the right foot today with a healthy and easy morning breakfast. My Huevos Rancheros Wraps are loaded with protein, vegetables and carbohydrates. This recipe is great for the kids and adults, with only 15 minutes of preparation time.

When I worked on my first cookbook 400 Best Sandwich Recipes, I wanted to the first chapter of the book to be a breakfast chapter. This was in 2011, when breakfast sandwiches were not very popular. I have twenty breakfast recipes in the breakfast chapter, and my publisher continues to tell me how much foresight I had. Nine years later, I’m still making these Huevos Rancheros Wraps.

Feel free to add or subtract ingredients from this recipe to make this your own. For example, substitute thawed frozen edamame beans for the black beans. Add corn and substitute Monterey Jack cheese for the cheddar cheese. If you don’t like black olives or onions, remove them. If you want to add additional protein, top these wraps off with plain nonfat Greek yogurt. I hope you enjoy this recipe. Have a great Tuesday and week ahead!

Three Ingredient Banana Smoothie

Looking for a super easy breakfast or snack recipe idea?  This Three Ingredient Banana Smoothie recipe is effortless. We have been making a lot of smoothies lately, and this one is the simplest. This recipe is quick and easy with very little cleanup. It is also great for kids and adults, gluten free and is only 3 ingredients.

If you want to increase the protein in this recipe add 1 (6 ounce) container of nonfat plain Greek yogurt and/or your favorite protein powder. My favorite plain nonfat Greek yogurt brands are the Fage and Trader Joes. With this addition, I add an extra teaspoon of honey. Also, I add 1/2 to 1 teaspoon of ground flaxseeds to this recipe. You can’t taste it and adding it increases the fiber and antioxidants.

Even though you don’t always see bananas on superfood lists, I definitely consider it to be one. Bananas contain fiber and antioxidants (such as including dopamine and catechins), potassium, Vitamin C and folate. There are also studies that state that bananas can reduce bloat, fight cancer, help with digestive issues and increase energy. One banana provides nearly 500 milligrams of potassium, giving athletes a quick dose of this very essential mineral.

I have been working on a ton of recipe testing lately (all healthy) for a super exciting new project! My kids have said they have never seen so much great, healthy food from me. HAHA, I guess I’ll take that as a “new” compliment! The other day, I had so many overripe bananas, that I made their favorite healthy quick breads: No Mixer Banana Bread recipe. Yes, with nonfat plan Greek yogurt and this time with fanned sliced bananas over the top. I don’t think it even lasted a full day, but it was wonderful. My son said, “There really isn’t anything better but this banana bread and a glass of milk.” Enjoy this No Mixer Banana Bread anytime of the year for breakfast, a mid morning snack or as a dessert, of course. No mixer is needed so cleanup is a snap.

Layered smoothies take extra time, but they are so worth it! My family has been working out a ton this weekend (tennis tournament, hiking, swimming, running and golf) so we decided to make these Layered Berry Smoothie just in time for the Memorial Day holiday. The best way to make these, so the flavors don’t run into each other is to prepare each flavor at a time, and put each flavor in the freezer until ready to layer.

These layered smoothies are so healthy with fresh strawberries, blueberries and bananas. They are also easy to prepare, taste fresh, are filling and are good for you. Feel free to use your favorite milk, and if you can’t have dairy, feel free to substitute coconut water.

I know it’s Passover so forgive me if you’re celebrating. I made this Fresh Strawberry Bread last week, and I could not wait to share the recipe. All you need is one big bowl–no mixer is needed. Combine all of the ingredients, except for the sliced strawberries in one bowl; mix and then fold the strawberries in gently. Even though this quick bread has bananas, it does not taste like banana bread when it’s done. The combination of the mashed bananas and nonfat plain Greek yogurt create an amazing moist texture and fantastic flavor.

Strawberries are now at their peak, and you can find them on sale at many groceries. One cup of strawberries has 50 calories, and they are packed with health benefits such as boosting your immune system, promoting eye and heart health, helping fight cancer, wrinkles, high cholesterol and so much more. Enjoy this recipe this spring and summer for breakfast, a snack or even dessert. My kids and husband went wild for us, so next time I will be making two!
