I am excited to share this recipe for Banana Dark Chocolate Muffins. This recipe is a twist of my very popular banana bread recipe from 10 years ago, which is one of my top posts ever.  What’s great about this recipe (besides the taste) is that all of the ingredients can be combined in one bowl, and no mixer is needed. I add nonfat Greek yogurt which adds moisture and increases the protein in the recipe.

These muffins are amazing, and my kids went wild over them. I almost wasn’t able to take a picture of them before they ate them all. Substitute semisweet or milk chocolate chips for the dark chocolate chips if you like (I personally like dark chocolate) Enjoy these muffins for a wonderful breakfast treat, afternoon snack, lunch, or dinnertime dessert during quarantine or any time.

I know it’s Passover so forgive me if you’re celebrating. I made this Fresh Strawberry Bread last week, and I could not wait to share the recipe. All you need is one big bowl–no mixer is needed. Combine all of the ingredients, except for the sliced strawberries in one bowl; mix and then fold the strawberries in gently. Even though this quick bread has bananas, it does not taste like banana bread when it’s done. The combination of the mashed bananas and nonfat plain Greek yogurt create an amazing moist texture and fantastic flavor.

Strawberries are now at their peak, and you can find them on sale at many groceries. One cup of strawberries has 50 calories, and they are packed with health benefits such as boosting your immune system, promoting eye and heart health, helping fight cancer, wrinkles, high cholesterol and so much more. Enjoy this recipe this spring and summer for breakfast, a snack or even dessert. My kids and husband went wild for us, so next time I will be making two!

If you read my blog on a regular basis, you can tell that we have been into making muffins lately at my house. Over the weekend my daughter, Leigh and I made these Healthy Banana Nut Muffins for the week for breakfast, lunches and afternoon snacks. We made regular size and mini muffins so the directions for the different baking times are below. These are really light and filled with flavor, and you won’t even believe they are whole wheat. No mixer is needed, so these are so easy and fun to make with the kids. If you make mini muffins, each muffin has 140 calories, 2.2 grams of fat, 26 grams of carbohydrates and 3.7 grams of protein per serving, so enjoy!

I had some leftover fresh Northwest Cherries and wanted to make something I don’t ordinarily make. I thought, cherry cinnamon rolls, let’s do it! I used frozen bread dough to simplify things, fresh cherries, and these came out incredible! My husband, who says he doesn’t like cherries (who doesn’t like cherries) loved these, and my kids said, “When are you making them again?” These Fresh Cherry Cinnamon Rolls are the perfect recipe for a summertime brunch or breakfast! My sister is making them for a wedding shower next week. Enjoy them while fresh cherries are at their peak!

Easy Peach Muffins

Summer is almost over, but we are still enjoying fabulous peaches here in the south. I had some fresh peaches that were starting to go bad so I made this recipe for Easy Peach Muffins which was really too simple for words. I adapted this recipe from Taste of Home using Greek yogurt and a few other kitchen staples, and they came out fabulous. These are perfect for a summer breakfast, after workout or afternoon snack, or dessert. If you can’t find fresh, be sure to use frozen. Frozen foods are picked at their peak and flash frozen so they are just as sweet and good for you. Happy Friday and have a super weekend!

Turtle Cookies

I know I say it often, but my daughter, Leigh, is an amazing girl. No new task is too much of a challenge for her, and she is becoming quite the cook and baker. She recently found this recipe for Turtle Cookies on Pinterest from the Pixelated Crumb, and she had to make them. I admit that I helped her a bit, but these came out incredible. She said, “These taste like a chocolate lava cake” while they were warm, and she was correct. The caramel makes this cookie even better. OMG! We both agreed (as well as my two boys) that these are some of the best cookies we have had in a long time. Thank you Leigh for this fantastic cookie recipe find!

My Top 4 Favorite Passover Desserts

I can’t believe Passover is right around the corner starting the evening of April 6th. I have had so many requests and emails about recipes I featured last year. Here are my top 3 favorite desserts. The first one is Passover Strawberry Bars (pictured above). All of these three Passover desserts are so easy to make, budget friendly, and they do not taste like your average Passover dessert.
