Frozen Pomegranate Margarita

We are huge fans of pomegranate juice at my house. I like to put a splash in my water bottles, but the kids will drink it by itself. I twisted up the classic margarita cocktail to create this Frozen Pomagranate Margarita recipe. It is perfect for anytime this summer, when you want a cool, frozen cocktail beverage.

I love that pomegranate juice has so many wonderful antioxidants and healthy properties helping prevent cardiovascular disease, prostate cancers, sports recovery problems and more. Easy Strawberry Cobbler

I began planning a Memorial Day weekend menu today, and this recipe for Easy Strawberry Cobbler is on my list. Now that strawberries are in season, it is the ideal time to prepare this warm, succulent cobbler. This recipe is extremely simple, with only fifteen minutes of preparation time. The most time-consuming part is slicing the strawberries.

A Southern dessert, a cobbler is usually prepared with a biscuit topping. For my recipe, I added oats to my topping mixture, which creates a slight crunch and nice texture. When my three kids tried this recipe they said, “Mom, this is the best thing you have ever made.”

Healthy Pan Bagnat Grilled Cheese

Today’s recipe for Healthy Pan Bagnat Grilled Cheese is one of my absolute favorites. Have you ever tried a Pan Bagnat? The name for this sandwich (pronounced pɑ̃ baˈɲa) originates from Nice, France. It consists of ingredients in a Salade Niçoise, including canned tuna, olives, anchovies, tomatoes, onions and hard-boiled eggs. I tweaked my recipe to create a healthy grilled cheese, while still using most of the traditional ingredients.

This sandwich recipe is one of my favorites in the “light and healthy” chapter of my cookbook 150 Best Grilled Cheese Sandwiches.  Place your tuna in a mixing bowl and add fresh lemon juice, vinegar, olive oil and pepper. These ingredients give it a nice, light flavor. Top the bread with fresh tomatoes and spinach leaves and some freshly grated Parmesan. Then, place in a Panini grill or large skillet to get it a little warm and toasted, and it’s fantastic!

Quinoa Tabbouleh Wraps

If you like tabbouleh, you’ll be a fan of these Quinoa Tabbouleh Wraps. Quinoa (KEEN-wah) is a tiny grain, often called “super grain” because it’s rich in so many nutrients, particular protein and all nine essential amino acids. The most common color of quinoa is white, which is what I used in this recipe. If you’re looking for other options, red quinoa has a richer taste. Black quinoa has an early flavor. Rainbow quinoa is a mixture of red, white and black.

Usually tabbouleh seems time consuming to prepare, but this recipe only takes 35 minutes from start to finish. Start with cooked quinoa and add tomatoes, cucumber, bell peppers, fresh parsley, green onions,  fresh lemon juice, good olive oil, black pepper and stir. It is that easy. This recipe is perfect for a healthy lunch or light dinner. It can also be completely gluten-free, using gluten-free tortilla wraps.

Feel free to half this recipe if you only are serving two people. If you make the entire recipe, the quinoa mixture is great as a healthy side. I like to eat one wrap and spoon the rest over mixed greens. Enjoy and have a great rest of your week! Alison

Alison’s Chicken Pasta Salad

If you’re looking a great pasta salad with chicken recipe, look no further. The first time I made this pasta salad, I knew I wanted my name on it. Alison’s Chicken Pasta Recipe makes a great lunch or light dinner that can be ready for hungry kids or spontaneous guests. You may want to double the recipe because it goes so fast.

This is a recipe I developed for a recipe collection I worked on with Canolainfo.org. I like to grill extra chicken and use the leftovers to make this recipe. Serve it on a bed of mixed greens or as a light main course served with a nice glass of Pinot Grigio. It is a terrific recipe to take on a picnic or make at the lake or the beach. Easy and Healthy Lentil Soup

Lentil Soup is so hearty, flavorful and healthy that I wonder why I don’t make it more often. This Easy and Healthy Lentil Soup is one my favorite lentil soup recipes. Hopefully, you have most of these ingredients already at home.

Lentils are filled with protein and fiber as well as iron, minerals and B vitamins. One-half cup of cooked lentils has:

Lentils come in three main varieties: brown, green and red. Most grocery stores carry brown lentils, usually dried. Green and red lentils may be found at specialty food markets. Unlike other legumes, lentils cook quickly without pre-soaking. Just make sure to rinse away any dirt, dust or debris before adding them to recipes.

Tuna Checkerboard Sandwiches

With kids at home right now, I wanted to share a twist on the basic tuna sandwich. Make it fun by mixing and matching different types of bread to jazz up the kids’ sandwiches. These Tuna Checkerboard Sandwiches are my healthier version using fresh lemon juice and white wine vinegar instead of mayonnaise. I also add freshly chopped basil or dill to mine if you have that at home or in your garden. This recipe is light, flavorful and a great new way to get the kids to eat more tuna. No Mixer Banana Bread Recipe

No Mixer Banana bread

I have been working on a ton of recipe testing lately (all healthy) for a super exciting new project! My kids have said they have never seen so much great, healthy food from me. HAHA, I guess I’ll take that as a “new” compliment! The other day, I had so many overripe bananas, that I made their favorite healthy quick breads: No Mixer Banana Bread recipe. Yes, with nonfat plan Greek yogurt and this time with fanned sliced bananas over the top. I don’t think it even lasted a full day, but it was wonderful. My son said, “There really isn’t anything better but this banana bread and a glass of milk.” Enjoy this No Mixer Banana Bread anytime of the year for breakfast, a mid morning snack or as a dessert, of course. No mixer is needed so cleanup is a snap.

Steak Nachos for Super Bowl Sunday

It’s only 3 weeks until the Super Bowl, and I am already getting emails, direct Facebook, Twitter, Instagram messages and texts for recipe ideas. This Steak Nacho Recipe should be on your list for sure! I made this last week for my kids and husband, and they LOVED it! It’s really easy, fun to make and so flavorful. I will be making several versions of these nachos with ribeye steaks in one, grilled chicken in another, and a third with just black beans (for my vegetarian friends). Also, if you’re looking for a great grilled steak rub, try the spices listed above because the steaks by themselves are incredibly tasty too.
