Watermelon Fennel Salad

What are you making this weekend for the July 4th holiday? This Watermelon Fennel Salad is on my list.  I love this recipe because it is so versatile for lunch or dinner. Serve it with pork, chicken, seafood or steak. It is especially good with grilled salmon. I call this a Superfood Salad.

If you have not experimented with fennel, it has a very fresh, aromatic anise flavor. It can be eaten raw, sautéed, roasted, or added to soups and pasta sauces. I love it for its flavor, but it also is very low in calories and has man health benefits. It is filled with nutrients including vitamin C, calcium, magnesium, potassium, and manganese.

Watermelon also has many health benefits, so I like to put it in “Superfood” category. Watermelon is high in Vitamins A and C. Vitamin C is great to boost your immune system. Vitamin A, beta-carotene, Vitamin B and much more.

Berry Banana Smoothie Bowl

This Berry Banana Smoothie Bowl recipe is my favorite new breakfast recipe. Not only is it easy to prepare, it’s filing, fast and filled with healthy raw ingredients. I am trying to consume a lot of immune boosting ingredients right now. Strawberries are packed with fiber, vitamins and a high level of antioxidants. Using strawberries in smoothies and smoothie bowls adds color and great flavor to your recipes.

Blueberries are also a great immune boosting fruit. One cup of blueberries has four essential nutrients, including fiber, vitamin C, vitamin K and manganese. Now is a great time to be enjoying them because they are in peak season. I always have bananas in my kitchen. Bananas are high in vitamin B6. This vitamin is needed to keep the immune system functioning properly.

Smoothie bowls have so many health benefits. Read on, and you’ll see why I love them so much.

Immune Boosting Smoothie Shots

These Immune Boosting Smoothie Shots are a fabulous way to kick off the week. In only five minutes and a quick few sips, you will get a healthy serving of immune boosting raw fruit and vegetables. Place all of the ingredients in a blender and process until smooth. If you want the mixture colder or thicker add ice and for added protein, add protein powder. Adding half of an avocado also adds thickness and more vitamins.

I love making these for my family for a simple way to get vitamins and minerals naturally. Kale is frequently called “the queen of greens” and “a nutritional powerhouse.” Kale is high in Vitamin C, which is helpful to keep your immune system strong. Kale is high Vitamin A is great for your vision and your skin. The Best Lightened Up Potato Salad

If you like potato salad, put this Lightened Up Potato Salad recipe on your list. My kid’s great grandmother, Dedee, made the best potato salad we have ever had. This Lightened Up Potato Salad is the closest version to hers. It’s the perfect side dish recipe to make this time of year, for picnics, and special weekends like Father’s Day, July 4th and Labor Day weekend.

This recipe is slightly lighter than hers, since it uses nonfat Greek yogurt, reduced-fat mayonnaise, fresh dill, celery and red onion. I hope you will love it as much as we do.

Simple Homemade Fresh Pesto

This Simple Homemade Fresh Pesto recipe is so easy to make and takes only 5 minutes to prepare. Toss together fresh basil, garlic, pine nuts, Parmesan, olive oil, salt and a touch of a fresh lemon juice in a blender or food processor. It is that simple.

I am thrilled about our fresh herbs growing right now. We planted them in hanging baskets a few weeks ago, so they’re plentiful at the perfect time. They have been a lifesaver (one less thing to purchase at the store). Honestly, I have been making this Homemade Pesto recipe lately on a weekly basis. Friends often ask me. What do you use basil for besides on pasta or on a tomato, basil, mozzarella salad? Here are a few suggestions:

•Add to pasta with grilled chicken or shrimp

•Serve on top of grilled or roasted flounder, snapper or salmon

•Add on top of avocado toast

•Blend or puree in soups

•Use as a base for homemade pizza

•Spice up a fresh salad

Basil is also an anti-inflammatory food so it can also help individuals with inflammatory health problems such as  arthritis. Some studies also say that eating basil can help with acne and help protect the skin from some effects of aging.

If you’re overwhelmed with the holidays, take a deep breath and read on. These Eggnog Milkshakes take only 5 minutes to prepare and you really only need 2 ingredients. If you’re having a group of kids or adults over, or just want to make something sweet for your family, these are simple and delicious! For adults, if you want to add bourbon or rum for a nighttime dessert treat, go right ahead. NBC Television “Daytime Alabama: Alison Lewis, Brooke Smith and Kale-Lentil Soup

So many ask people ask me about my television work. I love to do food television, and have been fortunate enough to do so many shows in the past year. I thought I would show a glimpse of us in action from yesterdays tapings for NBC 13 “Daytime Alabama” in Birmingham, Alabama. On one of the shows I featured “kale”. Everyone loved the recipes and was so excited to learn about kale and ways to use it in quick and healthy recipes. I made an awesome Kale-Lentil Soup filled with kale, lentils, garbanzo beans , andouille sausage and farro. I also made a Kale Saute with dried cranberries, walnuts and a drizzle of balsamic vinegar that I developed for Clean Eating Magazine. It was so much fun, and I thank Brooke Smith, Wes, Nicole and Alatia for all their great work and so much fun!
