Spring Salads: Curry Chicken Salad

I love Curry Chicken Salad, and this is one of my favorites. It’s really quick and easy because I like to use rotisserie chicken to simplify things. The combination of chutney, white wine, curry, cranberries and nuts flavor it to perfection. Easy and Light Cinco De Mayo Appetizer: Southwestern Spinach Dip

I’ve had several requests for spinach dip recipes, and this Southwestern Spinach Dip is one with a twist just in time for Cinco De Mayo. Use Pepper Jack cheese, green chiles and fresh tomatoes to flavor this wonderful appetizer. Just beware! It’s very addictive so purchase plenty of chips. Happy Cinco De Mayo!

Mother’s Day Dessert Idea: Lighter Lemon Squares

Who doesn’t love lemon squares? I thought for Mother’s Day, these Lighter Lemon Squares would be great, and they are very easy, only 25 minutes of prep time. My kids eat these in a matter of seconds so it’s good that this recipe makes 16 servings.

Easy and Healthy Side Dish: Grilled Zucchini with Rosemary and Feta

I get a lot of requests for easy and healthy side dish recipes, and this is one I absolutely love. Grilled Zucchini with Rosemary and Feta is incredibly flavorful and so versatile. It can be paired with any main-dish: chicken, shrimp, steak, burgers, fish, pork, etc. If you don’t have time to preheat your grill, you can certainly use a grill pan indoors over the stove. Feel free to substitute goat cheese for the feta, and my favorite by far is Belle Chevre.

Caprese Grilled Cheese

When I was asked to come up with a unique grilled cheese recipe for the Wisconsin Milk and Marketing Board and their “Grilled Cheese Academy“, I thought, why not take my spring favorite salad and make it a grilled cheese. Caprese Grilled Cheese is the simple combination of tomatoes, mozzarella, basil, balsamic vinegar and olive oil. I added avocado to mine. Feel free to use your favorite bread and any other ingredients you like.

Celebrate Earth Day: Spinach Salad Wraps

In honor of Earth Day, I thought I would offer a simple salad recipe that can also be a sandwich. This Spinach Salad Wrap is a breeze, fresh and flavorful.

For Earth day:

2. Clean green

3. Eat vegetables and fruits in season

4. Eat more organics

Healthy Breakfast or Afternoon Snack for Kids and Adults: Pumpkin Muffins

We love pumpkin in anything at my house, and these Pumpkin Muffins are my kid’s favorite. I modified this recipe from Ellie Krieger’s recipe from The Food Network. I increased the spices a bit and used allspice instead of cloves. Pumpkin Muffins are perfect for an afternoon snack or quick on-the-go breakfast. These have saved me when we are flying out the door to school in the morning and to sports activities in the afternoon. Also, they are as pretty, and delicious, as they look.

Kid’s “Healthy Baking” Cooking Class at “Studio B” in Alys Beach

Over spring break (I can’t believe it has been a month), I had the ultimate pleasure and honor to teach my “Healthy Baking for Kid’s Cooking Class” at Studio B in Alys Beach. It was such a wonderful experience in an incredible venue, Studio B, located at the most beautiful beach in the country, Alys Beach. We had originally planned for 15 kids, but when 24 arrived, we didn’t turn them away. We made all types of wonderful healthy baked (and no bake) treats. I will feature some on the blog this coming week. Below, is a shot of some of my hometown Birmingham friend’s children who attended and some other shots taken from the class by the talented, Colleen Duffley, owner of Studio B.

Low-Fat Simple Side Dish: Easy Tomato-Feta Salad

If you get into a rut of serving the same old tossed salad every night, try this. My kids love this Tomato-Feta Salad. It’s so light, fresh and easy to prepare. Serve it with chicken, pork, shrimp or a burger, and you’ve got a great low-fat side dish.

Low Carb, Low-Fat Crustless Broccoli Mini Quiche

I love to make creative recipes in muffin cups, and Crustless Broccoli Quiche are too good to be true. They have very few carbohydrates, lots of protein and very little fat. They also taste great for breakfast, lunch or a snack, and they are a great way to get your kids to eat broccoli. Feel free to use all Cheddar cheese or substitute mozzarella, Parmesan or any of your favorite cheese. Note, they can stick to the pan so spray the pans well, and carefully take a knife around the edges to remove them. They should look like these-no crust, but still so delicous!
