Skillet Blueberry Cobbler

Blueberries are at their peak season right now with most grocery stores selling them buy one get one free. I made this Skillet Blueberry Crisp on Sunday night, which only takes 10 minutes of preparation time. It’s so easy, healthy and tastes fantastic! My husband said this blueberry crisp was so good that it did not even need vanilla ice cream (or frozen yogurt to top it off). If you have some on hand and want that cold and warm temperature combination, feel free to add it. I used my 61/2-inch cast-iron skillet, but if you only have the larger one, you can double the recipe. Blueberries are also healthy for you. In only 80 calories per cup and virtually no fat, blueberries offer many nutritional benefits. They are packed with Vitamin C and are a good source of manganese (which is important in bone health). Blueberries have antioxidants that can improve vision and promote quicker adjustment of the eyes to darkness. They can also improve memory and reduce the risk of infections. They have high levels of compounds that help widen arteries and can help blood flow. Blueberries are also a good source of fiber, and they have phytonutrients that protect cells from damage. This recipe is great to serve to kick off summer, and it will be awesome to serve on Memorial Day and Fathers’s Day too!

I know it’s Passover so forgive me if you’re celebrating. I made this Fresh Strawberry Bread last week, and I could not wait to share the recipe. All you need is one big bowl–no mixer is needed. Combine all of the ingredients, except for the sliced strawberries in one bowl; mix and then fold the strawberries in gently. Even though this quick bread has bananas, it does not taste like banana bread when it’s done. The combination of the mashed bananas and nonfat plain Greek yogurt create an amazing moist texture and fantastic flavor.

Strawberries are now at their peak, and you can find them on sale at many groceries. One cup of strawberries has 50 calories, and they are packed with health benefits such as boosting your immune system, promoting eye and heart health, helping fight cancer, wrinkles, high cholesterol and so much more. Enjoy this recipe this spring and summer for breakfast, a snack or even dessert. My kids and husband went wild for us, so next time I will be making two!

I have been searching for a new carrot cake recipe for a while, and I finally found one. I am in love with this new cookbook 200 Best Sheet Pan Recipes and this recipe for Decadent Carrot Cake by one of my favorite cookbook authors, Camilla Saulsbury and Published by Robert Rose (my publisher). Getting dinner together can be challenging, especially for those who work full time and/or have kids. Sheet pan meals are the new one-pot meals since they allow you to cook several components of your meal at one such as her recipes for California Fish Tacos with Cucumber and Pineapple, Sheet Pan Clam Bake and even Weeknight Chicken and Stuffing. Her book begins with an “extra-simple pantry meal” chapter, followed by breakfast and brunch recipes, meatless meals, recipes for seafood, chicken, turkey, beef, pork etc. Of course, I love all of the recipes I have tried so far!

Children, including those who claim an aversion to vegetables, are drawn to carrot cake. Perhaps it’s because the carrots create a moistness that plays up the sweet spices of the cake, and accent the component everyone loves most: the tangy cream cheese icing. Whether you have kids or not, this carrot cake is the perfect mix of sweetness and softness. It’s perfect for Mother’s Day, spring parties and summer gatherings. It’s also so simple to prepare. This Passover Brownie A La Mode is really awesome to serve during the week of Passover. The Passover Brownie mixture is made with nonfat Greek yogurt which adds nice moistness to the texture and protein in the brownies. Serve on the brownie on their own with a glass of milk or with frozen yogurt or any nondairy whipped topping. I am a huge coffee cake fan, so I decide to try this Holiday Breakfast Cake recipe for my husband and the kids. This is a great recipe for Christmas morning, holiday gift, a brunch, a shower, dessert, or even a special snack to last all weekend. For dessert, you may want to add a simple icing, but it’s wonderful without it too! Serve at room temperature or warm beforehand. My favorite way to enjoy it is with a cup of coffee or for an afternoon snack.

My mother-in-law always prepares a pecan pie for Christmas dinner dessert. My husband and I decided to step out of the classic pecan pie box, and we tried this recipe for Bourbon Chocolate Pecan Pie for Thanksgiving which was a huge hit. Start by using a frozen pie crust. I used a regular size, but a deep-dish would work well too. Brush the edges with cream to give the crust a golden color. If you only have eggs on hand, that works too. Beat the eggs slightly and brush around the edges of the crust to give a glossy crust color. If you want to omit the bourbon, you may, but it gives it an extra southern bold flavor. You may want to make two pies while you’re at it because one goes fast! Enjoy this holiday season and year round or give as a holiday gift!

Are you planning your Thanksgiving menu? My sisters and I are, and we realized one issue we have every year is that we make way too many desserts. We typically prepare a pumpkin pie, pecan pie, chocolate pecan pie, carrot cake, and it goes on and on. No joke! I decided to try this recipe from an old Southern Living Magazine recipe for Mini Pecan Pies, and they were a hit! I tweaked it just slightly, and it’s heavenly. I figured this way, we have plenty of pecan pie, and now we really only need one more dessert. This also makes a great Christmas party idea, so I hope you like it!
