If you like to eat black-eyed peas and greens on New Years, I have a recipe for you. Grab your crockpot to make this Get Your Greens New Years Soup. It is very simple, with only 10 minute of active preparation time. Start by browning the turkey sausage in a large skillet and sauté the onion, garlic and fresh thyme. Then, dump and stir right into the crockpot; close the lid and cook.
This soup is very low in calories and fat and high in protein. It is also gluten-free. I use fire-roasted diced tomatoes in recipes that call for diced tomatoes as they add great flavor. I also love kale in this soup, but feel free to substitute your favorite greens, such as spinach or collard greens. Serve with a tossed salad and crackers, bread or cornbread for a healthy and hearty meal! Happy New Year everyone!

2 tablespoons olive oil
1 large yellow onion, chopped (about 2 cups)
1 pounds ground turkey sausage
1 tablespoon chopped fresh thyme
5 garlic cloves, minced (about 4 tsp.)
6 cups low-sodium chicken broth
3 cups frozen black-eyed peas (from 1 [15-oz.] pkg.)
3 ounces chopped kale (about 4 cups to 6 cups)
2 (15-oz.) cans fire roasted diced tomatoes, drained (only drained a little)
Salt to taste (optional)
2 tablespoons red wine vinegar
1/2 teaspoon black pepper
1. Heat oil in a large skillet over medium-high. Add onion, sausage, thyme, and garlic. Cook until sausage is browned and onion is tender, stirring occasionally to break up sausage, 8 to 10 minutes. Transfer to a 6-quart slow cooker and stir in stock and peas. Cover and cook until peas are tender, about 4 hours on HIGH or about 8 hours on LOW.
2. Stir in kale, tomatoes, and salt. Cover and cook until kale is wilted, about 10 minutes more. Stir in vinegar and pepper.
