Pumpkin Granola

Anything pumpkin is a favorite fall treat, so I created this delicious and wholesome Pumpkin Granola to get my pumpkin fix. This recipe is simple in that it requires just 35 minutes.

Because it’s loaded with protein, fiber, and healthy fats, this granola makes the perfect breakfast or snack. I love mine Greek Yogurt, with a little almond milk or just on its own as a snack.

Pumpkin Granola

About 5 cups

Ingredients:

3 cups old-fashioned oats
3/4 cup pecans
1/2 cup pumpkin seeds
1/2 cup dried cranberries
1/4 cup ground flaxseed
1 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
1/3 cup pumpkin puree
1/4 cup maple syrup
1/4 cup coconut oil
1 teaspoon honey

Preparation:

1. Preheat oven to 325°F. Line a baking sheet with parchment paper.

2. In a large bowl, combine oats, pecans, pumpkin seed, cranberries, flaxseed, pumpkin pie spice and cinnamon; set aside.

3. In a small bowl, combine pumpkin puree, maple syrup, oil and honey. Pour mixture over oats, mixing well. Spread mixture on a parchment-lined baking sheet and bake for 25 minutes, or until golden brown, stirring every 10 minutes. Let cool completely and store in a large Ziploc®.
