Since it’s National Grilled Cheese Day today and April is National Grilled Cheese Month, I wanted to celebrate with you by sharing my Grilled Guacomento sandwich recipe from my second cookbook 150 Best Grilled Cheese Sandwiches. This creative grilled cheese recipe combines two of my all-time favorites: guacamole and pimiento cheese. Some of you might think this sounds a bit odd, but trust me. Avocado (and guacamole) enhances just about about any food dish, including this fantastic sandwich. Enjoy this recipe all spring or summer (it’s also a fun recipe for Cinco De Mayo too). Grilled Guacomento

4 servings
8 slices whole wheat bread
1/4 cup butter or margarine, softened
1/2 cup homemade or store-bought guacamole
1 cup fresh spinach leaves
2 tomatoes, thinly sliced
1/2 cup homemade or store-bought pimiento cheese
1. Brush one side of each bread slice with butter. Place on a work surface, buttered side down. Spread guacamole equally on bread slices. Top 4 bread slices equally with spinach, tomatoes and pimiento cheese. Cover with remaining bread slices, buttered side up, and press together gently.
2. Place sandwiches on preheated panini grill or in a large skillet over medium heat and cook, turning once if using a skillet, for 3 to 4 minutes or until golden brown and cheese is melted. Serve immediately.
