Do you still have any leftover eggnog in your refrigerator? If you do, I have a great recipe for you: Overnight Eggnog French Toast. All of the preparation can be done the night beforehand. Let the bread cubes soak in the liquid mixture. The next day, take it out of the refrigerate and let stand 30 minutes. Sprinkle ground over the top and bake according to recipe below. If you’re all out of eggnog, you can substitute 4 cups of skim milk. It comes out tasting fabulous that way too! This makes a great brunch recipe, shower recipe or breakfast for a large group. It also tastes great for several days, so it makes wonderful leftovers too with a warm cup of coffee. My family loves this recipe, so let me know how you like it!
Overnight Eggnog French Toast
8 to 10
1 (16-ounce) Challah or French bread loaf, cubed
4 large eggs
2 egg whites
2 cups eggnog
2 cups skim milk
1/2 cup sugar
1/4 cup butter or margarine, melted
1/4 cup maple syrup
1 teaspoon ground cinnamon
1. Arrange half of bread cubes in a lightly greased 13- x 9-inch baking dish; set aside.
2. Whisk together eggs, eggnog, milk, sugar, butter, and maple syrup; pour over bread mixture, pressing bread cubes to absorb egg mixture. Cover and chill 8 hours. Sprinkle with cinnamon
3. Preheat oven to 350F. Bake, covered, at 350F for 30 minutes. Uncover and bake 30 more minutes or until lightly browned and set. Let stand 5 minutes before serving.
