Banana Granola Recipe

We have been making granola again, and my daughter, Leigh, found a Banana Granola recipe on Pinterest which I adapted, and it was a huge hit! Use this granola in your Greek yogurt, smoothies, to top smoothie bowls, or eat as a snack or dessert. It has a great taste and is so easy for words.

Banana Granola

25 minutes

Prep Times:

10 minutes

Yield:

4 cups

Ingredients:

3 cups rolled oats
3/4 cup walnuts
1/2 cup pecans
1 tablespoons raw sugar (turbinado)
Pinch kosher salt
1 tablespoon ground cinnamon
1/4 cup coconut oil
1/3 cup maple syrup
1 tablespoons honey
1 tsp vanilla extract
1 medium ripe banana, mashed

Preparation:

1. Preheat oven to 350F.

2. In a large mixing bowl, combine oats, nuts, sugar, salt and cinnamon. Whisk in coconut oil, maple syrup, vanilla and banana, mixing well.

3. Spread on a parchment paper-lined baking sheet and flatten down evenly. Bake 20 to 25 minutes or until golden brown. Let cool completely, and serve.
