Just in time for Father’s Day, July 4th and summer picnics and get-togethers, this Healthy Corn Salad is a combination of some of my favorite ingredients. I always tell my kids that summer corn tastes just like candy. This makes the perfect summer side dish served with chicken, steaks, pork and seafood. Corn is also very healthy as it’s a rich source of vitamins A, B, E and many minerals. Its high fiber content is good for digestion. The antioxidants present in corn act as a anti-carcinogen agents and can help prevent Alzheimer’s disease. Enjoy all summer long and if you’re making this in the winter, feel free to use frozen corn. Just thaw it, bring to room temperature and proceed with the instructions above.

Healthy Corn Salad

Prep Times:

15 minutes


4 servings


5 teaspoons olive oil, divided
1 tablespoon white wine vinegar
1 tablespoon lime juice
11/2 cups fresh cooked corn
1/2 cup finely chopped cucumber
1/4 cup sliced red bell pepper
1/4 cup sliced radishes
1/4 cup shredded carrots
1/4 cup freshly cooked or frozen peas, thawed
2 tablespoons minced fresh basil


1. In a small bowl, whisk 4 teaspoons oil, vinegar and lime juice; set aside.

2. In a large bowl combine corn, cucumber and remaining ingredients. Drizzle with dressing and toss to coat.

3. Cover and refrigerate at least 30 minutes or until chilled.
