I admit it. I have been MIA! Life got a little crazy buying and moving into a new house, but I am back! We are iced in today, so my kids and I made this Spiced Chocolate Covered Fruit recipe. It’s so easy and only 3 ingredients! Dark chocolate is rich in flavonoids, which have heart-protecting properties and are rich in antioxidants. ┬áThe protective factors are only seen in dark chocolate that contained at least 60 percent (preferably 70 percent or more) cocoa. There’s nothing better than a healthy snack with only 3 ingredients!

Spiced Chocolate Covered Fruit

1 (7-ounce) package dried apricots halves, bananas (or any fruit)
3 ounces chopped dark chocolate
1/4 teaspoon chipotle seasoning (optional)


1. Melt chocolate in microwave on MEDIUM power, stirring ever 30 seconds until smooth, about 2 minutes.

2. Dip half of apricots in dark chocolate and place on wax paper lined baking sheets. Sprinkle evenly with chipotle seasoning and let stand at least 1 hour.
