Peppery and tangy, watercress is a storehouse of many natural phytonutrients that have health and disease prevention properties. Peach Watercress Salad

4 servings


4 cups fresh watercress
2 fresh ripe peaches, cut into bite size pieces
1 avocado, peeled and diced
1/4 cup pine nuts, toasted
1/4 cup crumbled blue cheese
1/2 cup bottled citrus vinaigrette


1. Divide watercress among 4 serving plates. Top evenly with peaches, avocado, pine nuts and blue cheese. Drizzle with vinaigrette and serve immediately
