So Sorry I have been MIA since last week. I had Healthy Travel Magazine layouts due for our July issue, Fit & Well Birmingham copy due for our June issue and my latest and GREATEST new client for my media business! Not to mention, I have 3 kids, single mom, lower back disk issue, you get the drill…. Forgiven yet? I did get the amazing opportunity to go to Sedona to experience the amazing Lauberge De Sedona this weekend (typing on my flight). I slept 11 hours the first night and 12 hours the next. The spa was AMAZING!! I’ll tell you more in in the Sept issue of Healthy Travel magazine. Now..to the SHRIMP ALFREDO PIZZA recipe! It is AWESOME and SO easy! My 3 teens devoured it! Shrimp Alfredo Pizza

4 to 6 servings
1 lb. large shrimp, peeled and deveined
2 tbsp. Old Bay seasoning
1 cup chopped onion
2 tbsp. olive oil
1 lb. refrigerated pizza dough, room temperature
3/4 to 1 cup light Alfredo sauce
3 cups shredded Mozzarella cheese, divided
2 tbsp. chopped fresh basil
1. Preheat oven to 400°F.
2. In a large bowl, season shrimp with Old Bay seasoning. In a large skillet cook shrimp and onion in a hot oil over medium heat 5 minutes or until tender and shrimp is opaque.
3. Roll pizza dough into a 12-inch round on lightly floured surface. Place dough on a baking sheet or pizza pan. Spread Alfredo sauce evenly over crust. Top with 11/2 cups cheese. Sprinkle shrimp evenly over cheese and top with remaining cheese.
4. Bake 18 to 20 minutes or until crust is browned and cheese is melted. Let stand 5 minutes before serving; sprinkle with fresh basil and serve. Serves 4 to 6
