Many of you know that my dad has been ill, and my 3 kids and I have been staying with him this past year. We are moving in the next few weeks, but we have loved every minute of living here. My friend said it’s a blessing for kids to get the opportunity to live with a grandparent, and that is so true. My dad has so many wonderful caregivers that we see weekly, and they offer my father and us so much love. Our only male helper, Rick, loves to cook. He has a blast cooking with the kids while they were out of school. Last week he asked them if they ever had 7-up biscuits? None of us had. He told me what was in them: sour cream and 7-up. I suggested that we try Greek yogurt instead of sour cream, and it worked out great. I renamed these Super Easy Biscuits. They are so easy and so good, and we can’t wait to cook with Rick again soon!
Super Easy Biscuits
15 minutes
10 minutes
8 biscuits
2 cups self rising flour
1/2 cup nonfat Greek yogurt or sour cream
1/2 cup 7-up
1/4 cup melted butter
1. Preheat oven to 450F.
2. Combine flour, Greek yogurt, add 7-Up, mixing well.
3. Sprinkle additional flour on a board or a table and pat dough out into 8 biscuits. Melt 1/4 cup butter in a 9-inch square pan.
4. Place cut biscuits in pan and bake for 12 to 15 minutes or until golden brown.

It is such a blessing for the kids to spend time with their grandparents. My mother and father in law lived with our family for many years and my boys are better for it. Great simple recipe and best wishes for your move.
While I never lived with my grandparents, they did live in the same town as us and it was so lovely having them nearby.
