With the Mediterranean diet has been continually recognized as one of the healthiest diets in the world, it’s no secret that many people are currently giving it a try. Cat Cora’s Kitchen products by Gaea are synonymous with the Mediterranean diet. They are awesome! This recipe for Feta and Olive Oil Cakes is one of my new favorites. It is ideal if you’re following the diet, but don’t want to leave behind their sweet tooth. These treats fit well in lunch bags as an afternoon snack or as a better-for-you dessert option at an upcoming get together. Enjoy!
Feta and Olive Oil Cakes

6 servings
1/3 cup crumbled feta cheese
3/4 cup powdered sugar
2 Tbsp. honey
1/2 cup kalamata or regular extra virgin olive oil
1 cup all purpose flour
1/3 cup ground almonds
1 teaspoon baking powder
1/2 cup Cat Cora Kitchen or regular pitted Kalamata olives, cut in half
Brown sugar for garnishing
1. Preheat oven to 350F. Process the cheese with the sugar and honey in a mixer until smooth. Add olive oil. Combine flour with the ground almonds and baking powder and add to bowl while mixing.
2. Divide batter among 6 lightly greased muffin pans. Top each with half an olive. Sprinkle top of batter with brown sugar and bake for about 25 minutes or until lightly brown.
