Passover Berry Crisp

It seems bizarre to showcase Passover and Easter recipes already, but these holidays come early this year, just a few weeks away. I know people start planning their Passover menus ahead of time, and Passover desserts are always a challenge. Last year, I made this Passover Berry Crisp, and it came out great. I ended up making it several times, and I am positive it will be on this year’s list. Feel free to substitute 5 to 51/2 cups of apples or your favorite fruit for the berries. Happy spring holidays!


Passover Berry Crisp

20 minutes


6 to 8 servings


4 cups fresh sliced strawberries
11/2 cups fresh blueberries
1/2 cup sugar
1 teaspoon ground cinnamon
Vegetable cooking spray
1/2 cup unsalted matzo meal
1/3 cup sugar
1/4 cup sliced almonds
2 tablespoons butter or margarine, melted


1. Combine berries, sugar, and cinnamon, and toss gently. Spoon into an 11 x 7-inch baking dish coated with cooking spray; set aside.

2. Combine the matzo meal, sugar, almonds and margarine and stir well. Sprinkle over berry mixture. Bake at 350°F for 30 to 40 minutes or until browned.
