Spinach Quinoa

Ingredients:
8 ounces quinoa
1 bunch scallions, diced
1 yellow onion, diced
2 tablespoons olive oil
1 bunch parsley, finely chopped
1 bunch anise, finely chopped
1 bunch dill, finely chopped
6 cups water
4 cups spinach
Kosher salt and pepper
Preparation:
1. Saute onions, scallions and hears in olive oil Add 3 cups of water and cook 5 minutes. Add quinoa and cook 15 minutes more. Stir in spinach and cook until wilted. Season with salt and pepper to taste.
