I made these No-Bake Nutella Oatmeal Cookies a few weeks ago, and they were too good to be true. Not only are they a “No-Bake” cookie recipe, but they are filled with my favorite ingredients: Nutella, peanut or almond butter, dark cocoa powder, oats and almond milk. These are an ideal afternoon gluten-free snack or dessert. I think I definitely need to make a batch for Mother’s Day.
No-Bake Nutella Oatmeal Cookies
5 minutes
20 minutes
2 dozen
3 tablespoons butter
1/2 cup granulated sugar
1/4 cup almond milk
1 tablespoon dark chocolate cocoa powder
1/4 cup peanut or almond butter
3/4 cup Nutella hazelnut spread (or 1 cup chocolate chips)
2 cups rolled oats
1. In a medium to large saucepan, melt the butter over medium to medium-low heat. Add the sugar, milk, and cocoa powder and mix until combined. Stir in the peanut butter and Nutella until melted, followed by the oats. Continue mixing until all of the ingredients are incorporated. Reduce heat to lowest setting.
2. Working quickly, use a cookie scoop to shape balls and place them on a parchment-lined sheet pan. Refrigerate for thirty minutes until firm. Store in an airtight container in the refrigerator.

I just made these today and they were great! I didn’t have dark cocoa powder so I used 3 T of regular which made it incredibly chocolately (my old recipe used 3 T and I figured since it wasn’t dark chocolate, more might be better). The maintenance guys working at my place gave it an A+ and one asked for the recipe so his wife could make it for him this weekend. Also 2 friends asked for the recipe within hours of telling them about it. So glad to have a no-bake recipe using Nutella! Thanks!

These sound ridiculously awesome. Serious Nutella addict here, but I do have a question about the butter. Has anyone tried soy butter or any other non dairy alternative? Thanks for the share!! I also have to say that I am in love with the photograph. The colors/set-up gives it an extra yumminess factor! 🙂 FYI – this has so been pinned onto my board!
