If you’re looking for a light, healthy and delicious salad, this Chicken Couscous Salad is the answer. Start with a rotisserie or leftover grilled chicken and combine with cooked couscous, cherry tomatoes, basil and either sherry or balsamic vinegar. Top it off with goat cheese or even feta, and you have a super wholesome main dish salad. I loved serving this over arugula leaves, but my kids just ate it straight out of this bowl. This makes a great lunch recipe or easy dinnertime entree.

I’m loving this, Alison! Couscous is a go-to for me, especially when I want a simple dinner (aka – not cooking for my hubs) and this will definitely fit the bill!
Love how light and easy this salad is – perfect for lunch!
Oh…oh yes. LOVE.
This looks great, Alison! I don’t think my kids would eat it but that means more for me and Pete! 🙂
My mouth is watering!!!
Looks delicious, Alison!

Great salad Alison!! Love couscous and never added chicken into it as a salad. Pinned my friend!
Such a great salad that my whole family would enjoy!
looks wonderful and Ive been on such a balsamic vinegar kick lately, I love recipes that incorporate it.
This looks so light and refreshing! The perfect dish to dig into prior to a trip to FL (that involves summer ware and the possibility of a bathing suit … gulp).
This is one of my go-to lunches. I buy bottled dressing (a natural brand) to make it even easier.
🙂
I love that you have served it as a salad. I really love couscous but for reason never cooked it at home. I will have to give this one a try!
