I am so excited about sharing this simple, healthy main dish. In under 30 minutes, this recipe for Balsamic Chicken Cutlets makes a great healthy weeknight or weekend entree. This recipe is perfect if you’re following a gluten-free, Paleo or low carb diet. Pine nuts are a great source of protein, dietary fiber, magnesium and iron, and they add great flavor and crunch to this easy recipe.
Balsamic Chicken with Pine nuts

Ingredients:
2/3 cup balsamic vinegar
2 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
4 (4 ounce) chicken cutlets
2 tablespoons chopped green onions
1 to 2 tablespoons pine nuts, toasted
2 tablespoons chopped fresh Italian parsley
Preparation:
1. Whisk together balsamic vinegar, garlic and red pepper flakes in a small bowl. Drizzle evenly over chicken cutlets in a large shallow dish. Let stand 15 minutes.
2. Combine green onions, pine nuts and parsley in a small bowl; set aside.
3. Cook chicken, discarding marinade, over medium high heat on a grill or sauté pan 4 minutes on each side until desired degree of doneness. Top with pine nut mixture.
Note: This can also be made on a grill.
Looks fantastic and I love the way balsamic just brightens up any dish. I actually made roasted asparagus with an espresso balsamic two nights ago, definitely worth trying!
