Roasted Chickpeas with Parmesan and Smoked Paprika

I saw a version of this idea given as a holiday gift, and I couldn’t wait to try to create my own recipe for it. Roasted Chickpeas with Parmesan and Smoked Paprika make a wonderful snack, salad topping and even appetizer. I combined Parmesan cheese, a tiny amount of olive oil and smoked paprika, and they came out wonderful. Chickpeas, also called “garbanzo beans”, are an excellent source of fiber, folic acid and even protein. Eating them can help lower cholesterol and improve blood sugar levels, so this is a great way to add them to your diet. Each 1/4-cup serving has 5 grams of fiber and 7 grams of protein so enjoy.

Roasted Chickpeas with Parmesan and Smoked Paprika

21/2 cups


2 (15 ounce) cans chickpeas
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
1/4 teaspoon smoked paprika
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper


1. Rinse the chickpeas under water and allow to dry on paper towels for 10 minutes. Pat dry to make sure all of the water is removed.

2. Preheat oven to 400F.

3. Whisk together Parmesan cheese and remaining ingredients in a large bowl. Add chickpeas, tossing gently to coat. Spread evenly on a parchment paper lined baking sheet. Roast for 40 to 45 minutes, tossing gently every 15 minutes. Let cool completely.
