Easy as Can Be: Grilled Mussels with Lemon and Italian Parsley

I have never put mussels on my blog before, but since my 9-year-old, Zachary, eats them, I thought, why not? These Grilled Mussels with Lemon and Italian Parsley are so easy, prepared in under 30 minutes. If you don’t want to grill them, you can bake them in the oven at 500F for about 5 minutes or until shells open. This recipe is light and flavorful and perfect with crusty French bread and a salad (and glass of white wine for me).

Grilled Mussels with Lemon and Italian Parsley

Prep Times:

10 minutes

Yield:

4 servings

Ingredients:

1/2 cup dry white wine
1 tablespoon olive oil
2 teaspoons crushed red pepper
21/2 pounds fresh mussels
2 lemons, halved
1/4 cup coarsely chopped fresh Italian parsley

Preparation:

1. Stir together first 3 ingredients in a large bowl; set aside.

2. Scrub mussel shells with a brush, removing beards. Discard any opened shells. Place mussels in a grill wok or grill basket.

3. Grill, covered, with grill lid, over high heat (400F to 500F) about 15 minutes or until shells open. Discard any unopened shells. Add mussels to wine mixture, stirring to coat. Squeeze lemon over top and sprinkle with parsley.
