We love quesadillas at my house, but when I suggested dessert quesadillas, my kids were a little skeptical. Yesterday, my son, Alec, came home from cross country after running 3.6 miles. He tried these and and loved them. I wrote about it on facebook and had so much interest from moms and college students. I am very excited about being in Nashville this week on Newschannel 5 “Talk of the Town” preparing college recipes so tune in at 11:30 central or check the internet for the show.
Fresh Peach Quesadillas

1 (8-ounce) package low-fat cream cheese, softened
2 tablespoons maple syrup or honey
Cooking spray
4 ripe peaches, peeled
4 (8-inch) whole wheat tortillas
Sliced peaches, fresh mint, maple syrup (optional)
1. To prepare quesadillas, combine cream cheese and maple syrup in a medium mixing bowl, stirring well.
2. Heat a large nonstick skillet coated with a cooking spray over medium-high heat. Arrange one tablespoon cream cheese mixture and one sliced peach over half of each tortilla; fold tortillas in half. Coat pan with cooking spray. Place 2 quesadillas in pan; cook 2 minutes on each side or until tortillas are lightly browned and crisp. Remove from pan; keep warm. Repeat procedure with remaining quesadillas. Cut each quesadilla into 2 wedges.
3. If desired, heat additional peaches in large nonstick skillet for 1 to 2 minutes on each side or until lightly browned. Top quesadillas with peaches, fresh mint and syrup.
