A lot of my newly married couples and friends have been asking me for Easter brunch recipe ideas. I had to do some thinking because I was trying to come up with a really light, delicious easy recipe that would work for a Easter brunch, lunch or dinner. I also wanted a recipe that would work for Passover. I love smoked salmon so I thought this would be a perfect fit. It’s so quick, delicious and light. I served it as my appetizer for my dinner last night, and it was a major hit.
Smoked Salmon Dip
Prep Times:
10 minutes
Yield:
about 2 cups
Ingredients:
2 (4-ounce) packages smoked salmon, divided
1 (8-ounce) package light cream cheese, softened
1/2 cup light sour cream
2 tablespoons fresh lemon juice
1/4 cup chopped fresh dill
Assorted crackers, vegetables
Garnish: fresh dill
Preparation:
1. In a food processor, combine 1 package salmon, cream cheese, and sour cream. Pulse until mixture is smooth. Add lemon juice, remaining smoked salmon and dill; pulse until consistency is spreadable.
2. Chill and serve with assorted crackers and vegetables. Garnish with fresh dill, if desired.
this recipe looks so tasty. I bet it would also be lovely as a mayonnaise substitute on sandwiches. what about on white-bread tea sandwiches with thinly sliced rounds of cucumbers? I amn ready to make this!
I make a very similar version! I love this stuff; plus it’s easy and kinda fancy. perfect for easter.
