I found a new cookbook, Sheet Pan Paleo, which is packed with 200 recipes and super easy steps. I love the idea of using a sheet pan for the majority of  your cooking. Since my family loves eggplant, I made the Paleo Ratatouille, which was a huge hit! The flavors are wonderful, and it’s great served as a side or main dish. With all of these recipes, just toss ingredients onto a pan; then roast, bake or broil! And clean-up? It’s a breeze! I don’t personally follow the Paleo diet, but many people seem to have a lot of luck with the diet, but all of these recipes for any healthy eating! This recipe turned out great!

Zucchini recipes are so hot right now on the internet, so why not try something a little out of the box and combine them with fresh tuna, bell peppers and a citrus marinade such as in these Tuna Zucchini Kabobs. The Moroccan flavors of the marinade pair well with the grilled fish and vegetables. Easy to prepare and a party showstopper, these are low in calories, fat and carbohydrates. They are also a paleo-friendly and gluten free, so sit back, relax, and enjoy!

After I wrote my cookbook, 400 Best Sandwiches Recipes, I was often asked in television and radio interviews which sandwich recipe was my favorite? I can’t tell you how difficult it is to choose between 400 different sandwich recipes. This California Sandwich is in my top 5 favorites. I love the simplicity of the goat cheese spread combined with zucchini, squash, tomatoes, avocados and sprouts on this multigrain bread. If you can’t find alfalfa sprouts, I love using kale or broccoli sprouts, which are also widely available in grocery stories. This sandwich is perfect for the summertime for lunch or a light dinner served with a fresh corn salad and fruit. I promise it is as good as it looks!

Ratatouille is a French side dish located with Mediterranean vegetables. I decided to turn this healthy side into a salad with grilled vegetables and quinoa with this Grilled Ratatouille Salad recipe. This gluten-free and vegan recipe is perfect for a weeknight summer dinner or weekend lunch. I am actually serving this alongside grilled steaks this Memorial Day weekend. It’s three of my favorite things: healthy, flavorful and beautiful!

Meatless Monday Main Dish: Ziti with Roasted Summer Vegetables

School is a few weeks underway already in Alabama, and I am amazed at how hard my kids’ homework is. Last week, my two oldest children were up to almost 10 every night doing math problems, reading their quota of 150 minutes a week and so on. My son even had to do a “glog” which is actually the same thing as a “blog”. Pretty cool, huh. After a long day at school (and after-school sports), I love to serve the kids something really healthy, colorful and fresh. This dish was a hit the other night, especially topped with freshly grated Parmesan cheese. It’s great when I can feel good about what they are eating, especially when they are working so hard and need good nutrition.

Healthy, Light and Easy: Roasted Vegetable Wraps

Roasted Vegetable Wraps are as good at they look. You can’t go wrong when you combine fresh Farmer’s Market produce such as squash, zucchini and bell peppers with fresh basil and goat cheese (Belle Chevre is my favorite). This is a light vegetarian lunch or dinner idea, and it’s so easy to prepare. As summer nears, feel free to grill the vegetables over medium heat on a lightly greased grill rack 3 to 5 minutes on a side. You can also warm the tortillas slightly 1 minute on each side.
