Strawberry Yogurt Popsicles

My daughter Leigh has been on this huge health kick lately so we decided to make some better-for-you popsicles and came up with these Strawberry Yogurt Popsicles. We used vanilla Greek yogurt, fresh strawberries and honey to create an amazing tasting frozen fruit popsicle that has 16 grams of protein. These make a great after workout snack or dessert after dinner. And with only 3 ingredients? What more can you ask for? Happy summer!

Yes, I am at it again with this Blueberry Smoothie Bowl perfect for breakfast or an afternoon snack. I made a banana and blueberry smoothie, but wanted more so I added flaxseed, chia seeds, milk, and protein powder. I prefer to enjoy smoothies with a spoon these days so I topped it with some of my favorite healthy toppings.

Health Benefits of Chia Seeds: Chia seeds are an excellent source of omega-3 fatty acids and fiber at 10 grams per ounce (about 2 tablespoons). New research suggests that including chia seeds in your diet may help improve cardiovascular risk factors such as lowering cholesterol, triglycerides and blood pressure. It’s said that the amounts of omega 3′s can also work reduce symptoms of depression and increase brain function. A one-ounce (28 grams) serving of chia seeds contains 139 calories, 11 grams of fiber, four grams of protein and 9 grams of fat, as well as calcium, manganese, magnesium, phosphorus, zinc, potassium and B vitamins.

Health Benefits of Flaxseeds: Studies have suggested that flaxseed can also help lower the risk of diabetes, heart disease  stroke, caner and post-menopausal symptoms. Flaxseed contains high levels of fiber and Omega 3 fatty acids. Just two tablespoons of ground flaxseed contain more than 140 percent daily value of the inflammation-reducing Omega 3 fatty acids and more lignans than any other plant food. Are you burned out on your everyday breakfast routine? I am. I have been trying to change up my morning routine such as drinking warm lemon water before my cup of coffee, drinking more water and eating a healthier breakfast other than a nutritional bar. This Berry Yogurt Bowl starts with nonfat Greek yogurt (plain, vanilla or  you favorite flavor), fruit of your choice and your favorite seeds and nuts. This can also be made as a smoothie bowl recipe using my recipe for 3 Ingredient Banana Smoothie or Berry Peach Smoothie as the base and then top with the remaining ingredients. This recipe is fabulous for breakfast or even afternoon snack.

For breakfast or an afternoon snack, this Fruit and Yogurt Parfait is our newest favorite! We have been also snacking on freeze dried fruit. So what exactly is freeze dried fruit?  Say hello to Fruttata freeze dried fruit.  In case you’re not familiar, the crisps are created via freeze drying , the process of removing moisture from food through a dryer at -40°F. Made from the freshest fruits, Fruttata is the ultimate, tasty ingredient to incorporate into your favorite recipes.  These also make wonderful snacks, but also work great in this Fruit and Yogurt Parfait recipe.

Kids and Adults Favorite: Healthy Strawberry-Pineapple Smoothie

We love smoothies at my house, and my daughter, Leigh, makes them all of the time. These Strawberry-Pineapple Smoothies have been a hit in a lot of kid’s cooking classes I have taught recently. This photo was styled by Lillian, the 7-year-old who I taught a private cooking class with after she prepared the recipe. It’s so simple and refreshing, perfect for breakfast, healthy afternoon snack or dessert. It’s also wonderful after the holidays are over when you want something light, filling and healthy.

Halloween Healthy Snack: Apricot-Almond Snack Mix

I try to make new snack mixes for my kids, especially around holidays. I made this one up the other day, and my kids said it looked like Halloween. Feel free to add any of your favorite nuts or dried fruits. Beware though, once you starting eating it, you can’t stop.
