Healthy and Flavorful Stuffed Baked Potatoes

Sometime it feels like sides dishes get left out, and people ask me all the time for side dish ideas. These Stuffed Potatoes are low-fat and easy to make. The touch of Greek Yogurt and Gruyere add great flavor and texture. They go perfect with meat, fish or pork, and best of all, the kids love them. Layered Low-Fat and Fresh Mediterranean Salad

My friend, Kelli, recommended a version of this salad recipe to me that she said she served with fresh grilled fish. I decided to make it a main-dish salad so I added cooked grilled chicken and made a few alterations to make it my own (This recipe is adapted from Clean Eating magazine). You can also use a rotisserie chicken or shrimp if you’re short on time, or feel free to add olives, pepperocinis and even lettuce.

Spring Chocolate Molten Cakes in 30 Minutes

Many of you may have seen these Molten Cakes on my blog before. If you have, please forgive me for running them again, but when I went out last for my friend, Julie’s birthday dinner at “Flemmings” restaurant, that was the top dessert pick. It was delicious and oozing of warm chocolate, as it always is, and I told Julie that she can easily do these at home. Then the next day, I saw these spring, Easter ramekins at Target, and was so excited to give them a new look. This is a great idea for an Easter or spring dessert.
