It is hard to believe that school starts in a week. I will be driving my son to Missouri for College in a week (another thing hard to believe or think about). Before summer ends, I am continuing to use summers freshest fruit and vegetables in my kitchen. I created these Watermelon Mint Floats the other day which were a huge hit! Watermelon and Kale are two superfoods that (believe it or not) my three kids love! Last week we went out walking in our fun Alabama 97 degree heat, and I made this Watermelon Kale Smoothie topped with chia seeds and fresh watermelon and OMG it was so good! I know, I know. It looks weird at first. Trust me on this one. You just have to try it! For 152 calories and 3.6 grams of protein, this recipe also is very high in vitamin C and manganese as well as potassium, Vitamin A and B6! For health benefits of watermelon click here. It has been so warm here the past few weeks where 97 degrees is the new norm. I made this chilling, refreshing Watermelon Grapefruit Slushie which was a home run. My kids were skeptical about me adding the grapefruit, but they ended up loving it and asking me to make more. This recipe is healthy, detoxing, and refreshing. It is perfect to make after a tough workout or as a lunchtime or dinnertime dessert. With 98 calories per serving, this recipe is high in B6, Vitamin C, Vitamin A, Potassium and Manganese, so sip and enjoy!

Happy Father’s Day to all your dads out there! My daughter, Leigh, wanted to make something special for Father’s Day for her dad and mine, so she suggested a Watermelon Sorbet recipe perfect for this time of year. She went searching for a way to make sorbet without an ice cream maker (since we don’t have one). She adapted this recipe from Taste of Home, and this 4 ingredient recipe came out fabulous!  All of you dads (moms and kids too) are going to love it! This makes a great dessert recipe to serve for Fourth of July, Labor Day and all summer long. Enjoy and cheers to a great week ahead!

So Simple, So Summery, So Good: Watermelon-Tomato and Arugula Salad

This Watermelon-Tomato, Arugula Salad is a true taste of summer. This salad was inspired by a similar salad I had at George’s Restaurant in Alys Beach, Florida, one of my favorite places. The fresh combination of peppery arugula topped with sweet watermelon, mild yellow tomatoes and flavorful goat cheese mesh together perfectly. You don’t even need to use olive oil because it’s so healthy and low in fat. I drizzled mine with balsamic vinegar and fresh pepper, and that’s all I needed. Feel free to add grilled shrimp or grilled chicken to make this a main-dish salad as well. This is definitely my new favorite summer salad.
