Valentine Moscow Mule Cocktail Everywhere I travel, Moscow Mule is on every single cocktail menu that I see. My husband and I have been making them for quite some time, but I thought a Valentine Moscow Mule would be perfect to celebrate Valentine’s Day. I twisted the basic Moscow mule recipe and added fresh strawberries, and it came out so good! If you have ripe, super sweet strawberries, cut the sugar amount in half. For a non alcoholic version, omit the vodka and white cranberry-strawberry juice instead. Enjoy and happy Valentine’s Day!

Skinny Margaritas Super Bowl Cocktail

Just in time for Super Bowl, Valentine’s Day or Mardi Gras, how about a recipe for Skinny Margaritas? I know. Posting a cocktail on Monday? Oh well.. I love this recipe with all the fresh lime and orange juice, using the IMUSA Citrus Juicer.One of the earliest stories of the first margarita ever is that it was invented in 1938 at the Rancho La Gloria Hotel, halfway between Tijuana and Rosarito, Mexico, by Carlos “Danny” Herrera. It’s definitely one of my favorite cocktails!

Who else is really into kale? I am, and it’s awesome that my 3 kids love it too. Not only is it so healthy, but it is very inexpensive and a lot goes such a long way. This recipe for Stuffed Shells with Kale is one of my newest favorites and was inspired by my friend, Kelley of Mountain Mama Cooks. I saw it on her blog, and I made it right away. My kids loved the recipe too so it goes on our family favorites list. Feel free to add other vegetables, beef or sausage, to change it up a bit. When I saw this recipe from a past issue of Cooking Light magazine for Peanut Butter Cup Brownies, I knew that I had to make them. I have a weakness for anything peanut butter, but the fact that they are only 153 calories, 20 grams of carbohydrates and 7 grams of fat, I let this one slide. These brownies are so easy to make and make for parties (Super Bowl), Valentines and a great afternoon snack for the kids or dessert, of course. I used the new Reese’s cup minis, which worked perfectly. Enjoy!
