Rosemary Citrus Turkey Rub for Thanksgiving

Thanksgiving is only a few days away, but some of my running friends were talking today about the best ways to prepare their Thanksgiving turkey. I mentioned to them, “Why not a turkey rub?” They all liked the idea of preparing a turkey rub. This Rosemary Citrus Rub is too easy for words. With only 5 ingredients, you can prepare a super easy fresh and healthy recipe for your holiday Thanksgiving turkey. I love the lemon zest, garlic and citrus combination on my turkey. I have been getting so many questions at all of my recent health/wellness speaking engagements about lean proteins. Since people tend to forget about turkey (except during Thanksgiving), how about cooking turkey tenderloins? This recipe for Blackberry Glazed Turkey Tenderloin Salad is a 30 minute, simple recipe that is fresh, fast and pretty. The most difficult part is turning on the grill. The barbecue sauce, paprika and blackberry preserves add great flavor to the turkey. Enjoy the turkey sliced over a salad (such as above) or paired with grilled asparagus and a quinoa side dish for a healthy dinner.

Happy Thanksgiving everyone! Have a wonderful holiday season! I have so many things to be thankful for, and I appreciate everyone’s continued support. I want to share a Thanksgiving or Christmas holiday menu I developed for Honeysuckle White and Shady Brook Farms. I had a blast working on this project, and all of the recipes are “lightened up,” so enjoy. Top 10 Ways To Use Leftover Turkey

Do you have leftover turkey from Christmas? I do, and so many friends often ask me, “What should I do with my turkey leftovers?” I thought I would share a list of some of my favorite ways to use leftover turkey.

1.Turkey Roll-Ups-One of my kids all-time favorite lunch sandwich

2. Turkey Enchiladas-15 minutes to prepare see Turkey Enchiladas

3. Turkey Tetrazzini-True comfort food

4. Turkey Salad-Just add celery, low-fat mayonnaise, pepper and even toasted walnuts

5. Turkey Soup or Turkey Chili-Homemade turkey noodle or turkey wild rice soup or even turkey chili

6. Turkey Lasagna-Use turkey instead of beef but add fresh veggies, mushrooms and even sausage

7. Turkey Pasta-Combine cooked penne pasta, tomatoes, sliced turkey basil and balsamic dressing

8. Turkey Hash-Combine potatoes, onions, carrots, turkey to make a great brunch combination

9. Turkey Pita Sandwiches-Combine turkey, hummus and alfalfa sprouts for a light, fresh lunch.

10. Turkey Tacos or Fajitas-My kids love Mexican and don’t miss the beef when I make these. My favorite turkey brand is Shady Brook Farms and Honeysuckle White

Kids Friendly Thanksgiving Turkey Cookies

My kids are so excited about Thanksgiving this year, and our guest list is growing everyday. I thought I would share a fun cooking activity that the kids love: this Thanksgiving Turkey Cookies recipe. This recipe comes from Pillsbury, and you start with their refrigerated sugar cookie dough. It’s so easy, and your children will have a blast making these. These are also great to take to school to the teachers or share with the class, and they are always a big hit!

Turkey Eyeball Spiderweb Pizza

Halloween is just a few days away, and this recipe for Turkey Eyeball Spiderweb Pizza is a great main course for Halloween night or for any of your upcoming Halloween parties. I developed this recipe for Honeysuckle White and Shady Brook Farms, my favorite turkey brands. I created a simple homemade turkey meatball with panko breadcrumbs, egg white and seasonings, and my kids were eating them as fast as I could make them. They are delicious on top of this super easy pizza using an unbaked pizza crust and your favorite marinara or pizza sauce. These pizzas are so fun to decorate for Halloween. My daughter had so much fun helping me with the spiderweb design. Happy Halloween weekend!

Weeknight Favorite: Roasted Garlic Turkey-Basil Meatloaf

I love making Turkey Meatloaf this time of the year because everyone in the family loves it, and it’s such a cinch to prepare. This recipe has extra garlic flavor with fresh garlic and tomato sauce with roasted garlic. Chop some fresh basil and add panko breadcrumbs to make it even more special. Enjoy on a busy weeknight or sunday night supper.

Family Favorite: Homemade Spaghetti and Meatballs

I made Homemade Spaghetti and Meatballs last night, and my kids went nuts over it. For some reason, they acted like I had slaved in the kitchen all day. They were so impressed! This recipe is a breeze. It’s true comfort food for the first week of school. Feel free to substitute ground turkey if you prefer.
