Coconut Crusted French Toast

My summer has been amazing, and last week I was beyond lucky to be in the British Virgin Islands at Peter Island Resort & Spa. It was definitely a bucket list trip, and one of the most relaxing and incredible places I have ever been. The beauty, service, and food at Peter Island is indescribable. On my last day, I had to try their signature breakfast dish, Jean Kelley’s Coconut Crusted French Toast.  When I got home, I asked for the recipe, and I could not wait to share with y’all. Jean, a native of St. Vincent and the Grenadines, has been with Peter Island Resort for over twenty years. Jean embodies the soul and passion of the true Peter Island service. Jean never forgets a guest regardless of how many years have passed between their visits. They say if  you leave Peter Island without trying one of Jean’s Coconut Crusted French Toast or cookies, you haven’t really experienced the island. Jean is also told by many repeat guests that she keeps them coming back year after year. Peter Island is fortunate to have employees like Jean who shows their dedication to delight every guest ever day, one at a time. I hope you’ll enjoy this recipe as much as I did, and put Peter Island on your travel list!

Cutting Edge Travel Fitness: Travel Tuesday

As Founder and Editor-in-Chief of Healthy Travel Magazine, I am also looking for the latest trends in health, fitness and travel. If you’re like me, you know how hard it can be to motivate yourself to hit the gym while on vacation. Now, more hotels are making working out more appealing by offering cutting-edge travel fitness technology and diagnostic testing. The Fontainebleau Miami Beach, Fairmont Scottsdale Princess and The Ranch at Live Oak / Malibu are going far beyond the typical gym providing guests with customizable tools designed to help them achieve their health and fitness goals. I can’t wait to try these!

Fontainebleau Miami Beach is the only hotel to offer the TRAZER, which is an interactive fitness machine that engages people on many different levels while removing the boredom associated with conventional workouts. With TRAZER, the body’s movement controls life-sized characters on a giant screen while motivating you to increase performance. Fontainebleau’s personal trainers use TRAZER as a training tool and combine it with resistance bands, dumbbells and other “toys” designed to sculpt your abs, thighs, butt, chest…every inch of your body.

Well & Being at Willow Stream Spa at Fairmont Scottsdale Princess offers unique fitness classes such as RIP SURFER. RIP SURFER class utilizes SurfSET, which reinvigorates the typical cardio and weight training routine by fusing all the elements of surfing into a high-intensity fat-burning session. SurfSET shakes things up, continually challenging the body with dynamic angles, a fast tempo and an unstable surface.

The Ranch at Live Oak/Malibu, the acclaimed week-long results-oriented fitness and wellness retreat, now offers their guests cholesterol testing. The Biomarkers tested are total cholesterol, high density lipoprotein cholesterol (HDL), low density lipoprotein cholesterol (LDL), triglycerides, and glucose. Guests are tested upon arrival and departure so that they can see the change in their Lipid Profile, a detailed measure of the amount of fat in the blood. With a 1500/day calorie restricted vegetarian diet, four hours of morning mountain hiking, and afternoons full of core and ab work, weights, body toning and daily yoga sessions, most guests leave with higher HDL and lower LDL cholesterol levels.
