TGIF! We have had the best week at the beach and are headed home today! It has been amazing one-on-one family time! Thinking ahead… what’s for dinner when we get back? This 15 minute recipe for Penne with Tomato Basil Sauce is on my list for something really easy and quick (under 15 minutes). This is also a great way to use up some of your fresh basil (if you’re growing it this summer).  You can also use summer fresh tomatoes, roast them and puree them. Tomato Carrot Soup

With cold weather approaching, it’s time for soup. Fried Green Tomatoes are a must-have in the South in Alabama, and my kids beg for me to make Fried Green Tomatoes. Since this week’s Summerfest with the Food Network is featuring tomatoes, I thought these Lighter Fried Green Tomatoes were worth sharing. Homemade Tomato Sauce

Ripe tomatoes are too good this time of year, so it’s a fabulous time to make fresh Homemade Tomato Sauce. My kids love pasta for dinner, and I feel great giving them a homemade sauce filled with no preservatives, sodium or additives. Two out of three of my children will eat raw tomatoes, but all three of them will devour this. Tomatoes are a great source of lycopene, a carotenoid associated with tomatoes’ red color. Lycopene is full of antioxidants which are wonderful for bone health, protection against heart disease, inflammation and cancers. Tomatoes are also a great source of potassium, folic acid, Vitamin C and Vitamin E, so dig in!

So Simple, So Summery, So Good: Watermelon-Tomato and Arugula Salad

This Watermelon-Tomato, Arugula Salad is a true taste of summer. This salad was inspired by a similar salad I had at George’s Restaurant in Alys Beach, Florida, one of my favorite places. The fresh combination of peppery arugula topped with sweet watermelon, mild yellow tomatoes and flavorful goat cheese mesh together perfectly. You don’t even need to use olive oil because it’s so healthy and low in fat. I drizzled mine with balsamic vinegar and fresh pepper, and that’s all I needed. Feel free to add grilled shrimp or grilled chicken to make this a main-dish salad as well. This is definitely my new favorite summer salad.

Super Bowl Sunday: 4 Ingredient Appetizer: Tomato-Goat Cheese Rounds

Super Bowl Sunday is right around the corner, and my boys are so excited about the Steelers being in it this year. My youngest son, Zachary, loves the Steelers and got to see them play earlier this year in Nashville against the Titans. I have started to compile my menu, and these Tomato-Goat Cheese Rounds will definitely be on the list. This recipe was featured on a television segment last year, and the station loved them. The producer of the show told me, “These are simple, pretty, and everyone will think you were in the kitchen for hours.” I used Belle Chevre Goat Cheese, one of my all time favorites. If you can’t find it, Boursin works great too.

I love Brussels Sprouts this time of year, and I was so excited about a new way to serve them in this Brussels Sprouts-Tomato Salad. This recipe is perfect for Thanksgiving or your weeknight dinner, and it’s a cinch, flavorful and pretty. It was featured in the November issue of Birmingham Magazine and on NBC 13 “Daytime Alabama” this month so it’s quite the popular Brussels Sprouts recipe. I even got two out of three of my kids to try it, and honestly, they liked it a lot!
