Easy Pork Fajitas for Cinco De Mayo

It’s been a wild week in Alabama. So many heartbreaking stories and scenes of destruction just a mile or so away. We are very lucky even though it’s 6 days and no power. Work and life continues, and I’m headed to Nashville on Friday to be on Newschannel 5 “Talk of the Town” at 11 a.m doing a sandwich show for my new book “400 Best Sandwich Recipes: From Classics & Burgers to Wraps & Condiments”. Before I go, I thought I would leave you with one of the easiest recipes for Pork Fajitas. I like to use thinly sliced pork tenderloins that can be found at the grocery store. These are thin, healthy, low-fat and cook very quickly. Happy Cinco De Mayo everyone!

Strawberry Cobbler

Cobblers are one of my all-time favorite desserts. When I was trying to decide on a recipe to feature for the February issue of the Birmingham Magazine, the first thing that came to mind was a warm succulent Strawberry Cobbler. I thought it would be different to add oats to the topping, making it lighter and healthier. The recipe worked perfectly on my first try during recipe testing (I love it when that happens). When my 3 kids said, “Mom, this is the best thing you have ever made.” I must admit, I agreed. Enjoy on Valentines, Mother’s Day or really anytime. It’s true comfort food, easy to prepare and so worth it.

Mini Valentines Treats: Cookie Dough Truffles

I read a lot of food blogs, and I mean a lot! Since I am a consultant for a few food magazines and PR firms, I get paid to keep my eye on talented bloggers to possibly feature, new ideas in recipes as well as food trends. Many times, I come across a blog which I subscribe to and look forward to every day. In December, I was so excited when Carrots and Chocolate featured several variations of truffle recipes for Christmas. The Cookie Dough Truffles caught my eye, and the next thing I knew I was in the kitchen tinkering with her recipe. Recently, I served my variation at a party, and my friend, Andy, said, “I didn’t think cookie dough could get any better!” I thought that was testimony enough. These are really fun to serve on Valentine’s Day, and I can’t wait to make them later this week in Nashville working with the talented crew from Newschannel 5 on “Talk of the Town”.

Easy Valentine’s Day Brownies

Valentine’s Day is one of my favorite holidays for cooking every year because I usually teach a Kid’s Valentine Cooking Class and share my recipes with children. This year I have a great class scheduled along with a few television appearances lined up in Birmingham and Nashville preparing Valentine treats. These Valentine Brownies are just one of the recipes I will be making for the kids as well as television. This easy brownie recipe was shared to me by the editors of the Tables of Content Book from the Junior League of Birmingham (one of my must-have cookbooks). These are so easy, and you make them all in one saucepan. Use a small heart-shaped cookie cutter and decorate with your favorite icing. They are almost too simple to be so divine.

Creative Holiday Cookies: Fennel Pistachio Cookies

These Fennel-Pistachio Cookies are so delicious. I know it sounds a little strange, but the combination of fennel seeds, lemon zest, and amaretto, is incredible. See me on Tuesday morning CBS 42 in Birmingham on “Wake Up Alabama” between 6 and 7 a.m making Chipotle Chocolate Cookie as well as these and Cinnamon Chai cookies. I developed this recipe for http://butterisbest.com. Light, Simple and Budget Friendly: Chicken with Olives and Tomatoes

I love cooking in a skillet, especially a grill pan such as this. It’s so easy and quick, and dinner comes together in under 25 minutes. Using chicken cutlets works great in this recipe because they cook so quickly. If you can’t find chicken cutlets at your local store, just slice a boneless chicken breast so it is half the size in thickness. I love this fresh combination of the chicken with grape tomatoes, olives and fresh basil and parsley. It’s perfect this time of year, and my kids love it too. Super Bowl Favorite-Tomato-Basil Sliders

Okay, I am having a slightly busy week…all because of these Tomato-Basil Sliders. I am in Nashville to be on WTVF News Channel 5 “Talk of the Town” on Friday, and I will be in Birmingham on WBRC Fox 6 TV on Saturday morning preparing this recipe and a few others for Super Bowl Sunday that I will post in the coming days.


Sliders are very popular this year, and this recipe is very special. Using marinara, fresh basil and sun-dried tomatoes create such a flavorful burger that you won’t even need any toppings. And, they’re low-fat, and you can substitute ground turkey or pork if you wish. Adults and kids love them, and I hope you will too! Wish me luck, Alison


Sun-Dried Tomato Sliders

These proportions also work perfectly as a meatloaf in a 71/2- x 4-inch pan.

Prep: 20 minutes

Cook: 10 minutes

Yield: 8 servings

Ingredients

1 pound lean ground beef

3/4 cup panko breadcrumbs (or regular is fine)

1/2 cup chopped fresh basil

1/2 cup marinara sauce

1/2 cup chopped sun-dried tomatoes

2 egg whites

2 garlic cloves, minced

1/4 teaspoon freshly ground pepper

8 (1-ounce) Parker House rolls

Ketchup, lettuce leaves

Preparation

1. Combine first 8 ingredients in a large mixing bowl. Divide dough into 8 equal portions, shaping into a 1/4-inch patty. Lightly coat with cooking spray. Place patties in a grill pan and grill 3 to 5 minutes each side or until done. Serve on cut sides of rolls and top with marinara, ketchup and lettuce, if desired.
