Happy New Years! We are hanging out watching football today. Did you see the Texas A & M/Duke game? Wow! For New Years Day, I made this Nuts and Bolts recipe. This super easy snack mix is ideal for football games, Super Bowl sunday and March Madness. My kids can’t stop eating it, so I assume that is a good sign. Chocolate Chip Cookie Recipe with a Twist


This past weekend I had the craving to make homemade Chocolate Chip Cookies. I asked my friend, Nancy, “What is your latest favorite Chocolate Chip Cookie recipe? She told me that she takes any favorite chocolate chip cookie recipe, and she adds cinnamon to it. My daughter, Leigh and I headed to the kitchen and made five dozen of these Chocolate Chip Cookies. We were invited to a football party that day so we brought a few dozen. Our friends later texted me that zero were left. I used the famous Nestle Tollhouse recipe and added one teaspoon cinnamon and that was it. How easy is that? They were moist, soft and even better the next day. Try this Chocolate Chip Cookie recipe with a a little twist!

Peanut Butter Cup Blonde Brownie Recipe

When I saw this recipe from a past issue of Cooking Light magazine for Peanut Butter Cup Brownies, I knew that I had to make them. I have a weakness for anything peanut butter, but the fact that they are only 153 calories, 20 grams of carbohydrates and 7 grams of fat, I let this one slide. These brownies are so easy to make and make for parties (Super Bowl), Valentines and a great afternoon snack for the kids or dessert, of course. I used the new Reese’s cup minis, which worked perfectly. Enjoy!

BCS Football Championship Recipe: Spinach Dip with Greek Yogurt

Roll Tide! I can’t believe an Alabama team is (once again) in the BCS National Championship. You have no idea what it’s like to live in this crazy, passion-filled football state (Alabama and Auburn) where red jeans and houndstooth are at a premium. I have had many, many requests, phone calls and emails for appetizer recipes. Since everyone is trying to get their new years off right, I thought I would share this Spinach Dip with Greek Yogurt recipe which I recently made this on television for NBC 13 “Daytime Alabama”. It’s so easy, and it’s always a hit. It is perfect for any party, Superbowl, or weekend starter with the family. Here are a few other favorites appetizers ideas including  Chicken Chipotle Dip

It has been so cold in Alabama the past 2 months, so my family has been living on soup galore. It has finally warmed up thank goodness, but this Southwestern Soup is one of my kid’s favorites. My friend, Nancy, worked hard helping me to perfect the recipe. Many thanks to a wonderful friend. I used rotisserie chicken which saves a lot of time and effort. I love the touch of the homemade tortilla strips. I make this soup even in the summertime, but it’s always fabulous to serve this time of year.

Hot Artichoke Dip with Black Eyed Peas

Artichoke Dip is just about everyone’s favorite appetizer recipe, and I am always looking for ways to turn and twist it to make it different. This Black-Eyed Pea-Artichoke Dip combines artichokes, bacon, black eyed peas, Greek yogurt, reduced-fat mayonnaise and mozzarella cheese to create a warm dip that’s perfect for this time of year. I served this on New Year’s Day, and I thought it would be a perfect addition to anyone’s list to serve on Super Bowl sunday.

25 Minute Appetizer: Buffalo Chicken Dip

When I was thinking of recipe ideas for my upcoming Super Bowl television cooking segment (this Friday on NBC “Daytime Alabama”), I asked a close friend and assistant, Nancy, what she likes to serve for her Super Bowl parties (she is one of the best cooks I know). She told me about her favorite Buffalo Chicken Dip which she says is a must. I was reluctant at first (although my kids are huge fans of buffalo wings) because when I judged a cooking contest last year, I saw over 800 recipes for buffalo wing dips. She later convinced me to let her make it for me, and oh my, was she right! The night after I taped the television segment, I had a party with several couples and their children. Everyone went absolutely nuts over the dip, and they were begging for more. Nancy told me to be sure to use “Franks RedHot Sauce”, but any hot sauce will work. I also used rotisserie chicken to make things a lot easier and reduced-fat cream cheese to lighten it up a bit. Enjoy this for the Super Bowl this year or anytime you need a simple and sure to please appetizer.

Super Bowl Appetizer and Party Tips: Brie with Sun-dried Tomatoes and Basil

One week from today is the Super Bowl, one of the most fun sporting events of the year. I filmed a Super Bowl television cooking segment for NBC “Daytime Alabama” which will air next week, making four easy appetizers. This 5 ingredient recipe for Brie with Sun-dried Tomatoes and Basil is a cinch, taking only 20 minutes to prepare. Here are some of my favorite Super Bowl tips for hosting your upcoming party.

Super Bowl Hosting Tips:

-Think “green” and make it easy. Send out E Invites or call or Facebook your friends

-Set up as many televisions as possible if you’re having a large party

-Plan simple and easy food to put out and refill. Also, think about servings foods that are easy to pick up and eat in your lap.

-Have one room planned for television watchers and another for those who just want to talk (okay…some of us women)

-If you’re inviting guests with children, have video games, movies, coloring pages, crayons and puzzles to keep them busy

-Offer healthy foods: such as serve fresh fruit and vegetables with hummus

-Have plenty of beverages and a variety for everyone

-Ask guests to pitch in and bring food (give them a task)

-Have a “faux betting pool” set up and a few prizes for the winners
