I am unsure if nachos or chicken wings are the most served appetizers for the Super Bowl or really any big game, no matter the sport. Did you see this? The National Chicken Council estimates 1.3 billion chicken wings will be consumed this weekend, with today being the second biggest eating day of the year. My family, especially the boys, absolutely love and request nachos. Super Bowl Sunday is next week, so how about an appetizer that’s unexpected such as these Greek-Style Nachos. These are so easy to make, and your guests will be wowed. There is minimal preparation time (just 30 minutes of chill time). I used Gaea Kalamata Extra Virgin Olive Oil from the P.D.O. region of KALAMATA in the southwest Peloponnese, overlooking the Ionian Sea is a vast olive grove and the land that gave birth to the most sought-after world famous “Koroneiki” olive variety. Enjoy on Super Bowl Sunday or anytime of the year as a wonderful appetizer to start a meal of chicken, seafood or pork.

For an fabulous tasting appetizer, try these Pork Eggrolls which are so easy and come out great! These egg rolls make a great alternative finger food for the Super Bowl and are a family favorite served with fried rice or miso soup. Use water to seal the edges, but you don’t need much at all–not even 1 teaspoon on each wrapper. Use the preshredded cabbage already in the package to speed up the preparation time and feel free to substitute ground chicken. Be sure to make extra because these great heated up later or the next day. Check my favorite fried rice recipe, Quinoa Fried Rice  which is gluten free!

It’s only 3 weeks until the Super Bowl, and I am already getting emails, direct Facebook, Twitter, Instagram messages and texts for recipe ideas. This Steak Nacho Recipe should be on your list for sure! I made this last week for my kids and husband, and they LOVED it! It’s really easy, fun to make and so flavorful. I will be making several versions of these nachos with ribeye steaks in one, grilled chicken in another, and a third with just black beans (for my vegetarian friends). Also, if you’re looking for a great grilled steak rub, try the spices listed above because the steaks by themselves are incredibly tasty too. Healthier New Years recipes, yes it’s true! New Years Eve has snuck up on me this year, and I am still not sure of my New Years plans yet I typically make a really nice dinner at home with some wine and/or champagne, a great appetizer, entree and nice dessert. I have been working on some healthier New Years recipes this year as you’ll see below my developed recipes for SC Johnson,  Fitness Republic, Momspark and of course, Ingredients, Inc. starting with my Pear Pecan Crostini Recipe from Ingredients, Inc. Here are some of my top healthy lifestyle tips that I am going to try to stick to in 2016:

  1. Do not skip breakfast!
  2. Drink more water.
  3. Eat more color: more vegetables and fruits everyday in orange, green, yellow, purple, red and white
  4. Do more yoga
  5. Live in the moment and be more mindful.
  6. State gratitude: Write down or say to myself three things I am grateful for every day.
  7. Exercise including cardio and weight training
  8. Read more
  9. Step out of my comfort zone more often
  10. Keep on traveling

What are you serving for the big game on Super Bowl Sunday? Who are you routing for? I had a request for seafood for the game so I am making these super easy Fish Cakes with Remoulade Sauce. Feel free to use catfish, grouper, cod or even tilapia. These are super easy to prepare and are always a huge hit! If you’re having fresh shrimp, use the remoulade sauce to dip them in as well! Enjoy for the game or for any weeknight. Serve on a bun or on lettuce leaves for a wonderful appetizer or main dish.

My sister, Julie, makes the best tortilla soup I have ever tried. I finally asked her for the recipe which actually came from The Food Network Kitchens. I adapted their recipe to create this Healthy Tortilla Soup. This recipe is so easy and only takes 10 minutes of preparation time. I used a rotisserie chicken for the chicken in this recipe which made this soup even simpler. Feel free to use fresh tomatoes and fresh corn if you’re making this in the summertime, but canned tomatoes and frozen corn are won’t compromise the flavor. My 3 kids loved this recipe, and it’s going on our Super Bowl recipe menu for sure! Enjoy this 30 minute recipe all winter and year round.

Happy New Year! For New Year’s day and football watching, I made this comforting and fabulous Kale Lasagna Soup recipe. It has all of my favorite ingredients including kale, Italian sausage, tomatoes, basil and carrots. This soup is filling, a one dish meal, and so quick and easy. Feel free to use gluten-free noodles or no yolk ribbon noodles–they look like mini lasagna noodles. My family loved this recipe–we ate the entire thing in one day! This is perfect for a cold winter evening, Super Bowl or anytime during the year!

Are you in the hustle and bustle of the holidays already? I certainly am, but I love holiday entertaining! Trust me, entertaining this time of year can be fun and easy. I am very excited to share this recipe for Warm Kale Bacon Dip just in time for your holiday gatherings. It’s my family’s favorite appetizer as it uses a few of our most loved ingredients such as kale, Borden and Sargento cheeseDannon Oikos Greek Yogurt and Bays English Muffins. What I really love about this recipe is its simplicity by using high-quality brands of shredded cheeses along with healthy ingredients such as Greek yogurt and kale. Friends ask me all the time for my top stress-free cooking tip and I usually tell them to keep it simple. Use your favorite ingredients and stop by the dairy and/or freezer section to make your life even easier. You can find so many items in these sections of the grocery store, which make cooking more economical, convenient and your recipes taste even better.

For this dip recipe, start by roasting the kale with a touch of olive oil until it is slightly wilted and crispy. Then, add to the cheeses and yogurt, stirring well. Complete this by topping with crumbled bacon. If you’re not a bacon fan, you may omit this step. I used Bays English Muffins from the dairy section, which are a perfect accompaniment to this warm cheesy dip with their great texture and flavor.

Besides being tasty, this holiday appetizer is healthy too! It is filled with calcium, one of the body’s most important minerals for strong healthy bones, as well as active cultures in the Greek yogurt, which adds more protein to this appetizer while also aiding in digestion and boosting the immune system (we all need this during the cold winter months). Kale is another fabulous, healthy ingredient addition, known as a super-food with vitamins and minerals.
